Fettuccine and Chicken with Broccoli in Cheese Sauce

I received the fresh pasta as part of the Wildgrain box I was sent at no charge. I used it to make a fettuccine and chicken dinner
Last week I showcased the deliciousness that was the Wildgrain box. To remind you – Wildgrain is a subscription box where you receive ready to bake artisan breads, pastries and pastas. As any of you that read this blog on the regular know I love to bake and in all of my baking you will often find different types of bread. My favorites are Challah and bagels. In fact, I made bagels day before yesterday!

The Wildgrain box is full of sourdough offerings which is not something I tend to bake so that was a lovely change. It also came with some fresh pasta. While I love to make pasta, I will never say no to packaged fresh and I took full advantage of the non-gmo, no artificial ingredient fettuccine included to made a simple, yet delicious meal using some leftover chicken breast.

Fettuccine with Chicken and Broccoli in Cheese Sauce
Serves 2
- 1 package (12 oz) fresh fettuccine
- small head of fresh broccoli, trimmed and cut into bite sized pieces
- 1 cup cooked chicken, preferably dark meat
- 2 TBS butter
- 1/4 cup flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 cup white wine, optional
- 1 tsp salt
- pinch of pepper

- Cut the broccoli into small pieces, stem included. Set aside
- Bring a large pot of salted water to a boil.
- When the water reaches a rolling boil add the fresh pasta and cook according to the directions on the package. Reserve about a cup of the pasta water for possible later use in the sauce.
- For the last minute of cooking add the broccoli.
- Drain the pasta and broccoli and set aside. Return the pot to the heat.

- Melt the butter and add the flour. Stir to make a paste. Slowly stir in the milk using a whisk to keep things smooth.eep stirring as the sauce starts to thicken and come to a boil. Lower the heat and stir in the cheese.
- If the sauce seems to getting too thick, stir in a little of the reserved pasta water.

- Add the chicken to the sauce

- Then add the pasta and broccoli.
- Taste and adjust seasoning if necessary.
How Was the Pasta and Chicken Dinner?
It was, somehow just what I needed. Truly delicious fresh pasta, a wonderfully cheddary cheesy sauce and the still crisp broccoli with the bits of chicken here and there. It made the sad looking leftover chicken into something brand new and tasty.
