Turn off the Instant Pot and season rice with cumin, chili powder, and paprika.

Add the chicken broth and scrape the bottom of the pan with a wooden spoon or spatula to make sure that the rice does not stick together.

Add the tomato sauce and diced tomatoes with chilies. Stir to combine.

Place the lid on the Instant Pot and seal the valve. Set the pot to pressure cook for 12 minutes or use the rice setting on the Instant Pot. When the cooking time is done, do a quick release! This is all there is to it! Before serving and right after you release the lid, make sure to fluff up the rice before serving.

Instant Pot Mexican Rice
YIELD: 5 SERVINGS
PREP TIME 10 minutes
COOK TIME 12 minutes
ADDITIONAL TIME 15 minutes
TOTAL TIME 37 minutes
Ingredients
- 3 tablespoons vegetable oil
- 2 cups long-grain? rice
- 1 small onion, diced
- 1 teaspoon minced garlic (two cloves)
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- 2 ½ cups chicken broth
- 1 15-ounce can tomato sauce
- 1 10-ounce can diced tomatoes with green chilies
Instructions
- Set Instant Pot to saute mode and add vegetable oil. Allow the oil to heat up for a few minutes, then add the rice, onion, and garlic. Saute until the rice is fragrant and the onion is translucent, about 5 minutes.
- Turn off the Instant Pot and season rice with cumin, chili powder, and paprika.
- Add the chicken broth and scrape the bottom of the pan with a wooden spoon or spatula to remove any stuck-on rice or onion.
Add the tomato sauce and diced tomatoes with chilies. Stir to combine. - Place the lid on the Instant Pot and seal the valve. Set the pot to pressure cook for 12 minutes or use the rice setting on the Instant Pot.
- When the cook time is up, do a quick release.
Remove the lid from the Instant Pot and stir to fluff the rice before serving.
