How To Make Instant Pot Mexican Rice

Ello, folks! I hope that you all are having a beautiful day? As most of you know the Instant Pot craze is still going strong! I think this is the one kitchen tool that is in just about every kitchen in America. Today I wanted to share an easy Instant Pot Mexican Rice recipe that I feel that you and your family will enjoy.

I don’t know about your family but we seem to get so busy during the fall months, that it is almost impossible sometimes to get everything done, let alone make an amazing family meal. This Instant Pot Mexican Rice is the perfect side to just about any dish or you can use it as the main course.

This dish is super easy to make, making it perfect for anyone that enjoys cooking with an InstaPot. With just 10 minute prep time, 12 cook time, and 15 pressurizing time, you will be done before you know it! You could pair this with just about anything. I always pair my rice with a meat of some sorts because if I set a bowl of rice infront of my husband he will wonder if I bumbed my head. LOL

How To Make Instant Pot Mexican Rice

Like I said this is really simple but I still like to show you some in process images so that you can get an idea of what is going on besides just looking at a recipe. The first thing you will want to do is to set Instant Pot to saute mode and add vegetable oil. Allow the oil to heat up for a few minutes, then add the rice, onion, and garlic. Saute until the rice is fragrant and the onion is translucent, this will take about 5 minutes.

Turn off the Instant Pot and season rice with cumin, chili powder, and paprika. 

Add the chicken broth and scrape the bottom of the pan with a wooden spoon or spatula to make sure that the rice does not stick together.

Add the tomato sauce and diced tomatoes with chilies. Stir to combine.

Place the lid on the Instant Pot and seal the valve. Set the pot to pressure cook for 12 minutes or use the rice setting on the Instant Pot. When the cooking time is done, do a quick release! This is all there is to it! Before serving and right after you release the lid, make sure to fluff up the rice before serving.
