Simple Garlic and Lemon Roasted Green Beans – Recipe

The Food Blogger’s food this week is green beans – heaven knows I have them around. I think I’m still eating ones I froze in 2011! If nothing else grows on this little farm they do. Most nights when I cook them I just roast them with a bit of olive oil but for this post I went and got all fancy. I added garlic and lemon to the mix. Woo hoo. They actually tasted really good and I’ll probably make them this way more often. It certainly brightened up frozen beans – even ones that had been frozen straight from the plant.

Simple Garlic and Lemon Roasted Green Beans

Serves 2

2 cups green beans
juice and zest of one lemon
2 cloves garlic, minced
salt and pepper
1 tsp olive oil

Preheat the oven to 350°

Add the green beans to a baking dish. If frozen place in the preheated oven for about 10 minutes to start cooking. Remove from the oven. If your beans are fresh you can start from here.

Add the olive oil, lemon juice, garlic and lemon zest to the beans in the roasting dish.

Mix well, making sure that the garlic and zest distributes evenly. Bake in the oven for 30 minutes until the beans are cooked and the smaller ones are starting to brown.

Wasn’t that easy? They really are quite good cooked this way and in fact I cook almost all of my vegetables in this manner. It just gives them a richer flavor. They are good hot out of the oven or at room temperature.
