Winter is the perfect time to break out the slow cooker. I will be the first one to admit that I don’t use mine as often as I could. I do love the ability to put the ingredients in, turn it on and then forget about it until dinner time. I have used it in the past to make applesauce in the summer – it’s a great vehicle when you need to cook something down. If I didn’t make my homemade ketchup in such a large volume it would probably be great for that! I was going to be baking today but I was in the mood for a chicken dinner so I decided to break out the slow cooker and let it take care of the main meal for me. I looked through some of my cookbooks and found one for slow cooker chicken with pineapple.

Slow Cooker Hawaiian Chicken with Turmeric Honey Rice

Serves 4

4 boneless skinless chicken breasts
1 15 ounce can sliced pineapple in its own juice, reserve juice
1/2 green pepper, sliced
1/2 red pepper, sliced
1/4 tsp ground cinnamon
1/2 tsp Chinese 5 spice powder
1/2 tsp crushed red pepper
1 tsp salt

Turmeric Honey Rice
electric pressure cooker
2 cups Jasmine Rice
2 cups water
1 tsp turmeric
3 TBS Honey
2 tsp sea salt

stove top:
2 cups Jasmine Rice
4 cups water (1 1/2 cups at over 3,000 ft)
1 tsp turmeric
3 TBS honey
2 tsp salt

Place chicken breasts in greased 4 quart slow cooker
Add two slices of pineapple on top of each piece of chicken. If there are more pieces of pineapple in the can put them off to the side (My can of pineapple was chunks so I just sprinkled them about.)

Place red and green pepper slices evenly over all of the pieces of chicken (I only had green peppers ’cause that is what we grow on the Farm)
Sprinkle the cinnamon, 5 Spice, crushed red pepper and salt over the top of the chicken, peppers and pineapple.
Finally, pour 1/4 cup of reserved pineapple juice over the top.

Cook on high for 2 1/2 – 3 hours or on low for 5 – 6 hours. (I chose the low option)

Turmeric Honey Rice – Electric Pressure Cooker
Add all ingredients to pressure cooker. Stir to mix well.
Set for white rice (12 minutes)
After the rice has cooked, open the pressure cooker and stir the rice with a fork to fluff.
Stove Top:
Add all ingredients to a heavy bottomed pot. Stir to mix well.
Bring rice to a boil and reduce to a simmer.
Let cook until rice is done, about 20 minutes.
Remove lid and fluff with a fork

How Was the Slow Cooker Chicken?

I have to admit I was surprised at how tasty this was. The chicken was deliciously moist and it had the flavors of the pineapple and pepper infused into it. The cinnamon and 5 spice powder added a lovely background and the crushed red pepper provided a wonderful bit of heat at the end.

I made the meal with two chicken breasts and served with the turmeric honey rice and a farm salad of homegrown cucumber, tomato and cantaloupe it made enough to feed us for two nights. The rice is a delicious dish I have made before and it can complement many different meats or seafood like salmon.
