Speculaas Sugar Cookies Recipe

As per usual I was in the mood to bake. This time ’round I wanted to make cookies so I turned to my various cookbooks and had a looksie. The husband had given me a jar of speculaas in my stocking and I wanted to use it so I took a basic sugar cookie recipe in Dorie’s Cookies and ran with it.

Speculaas Sugar Cookies
Makes about 60
- 2 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 tsp speculaas spice
- 1/2 tsp salt
- 2 sticks unsalted butter, at room temperature, cut into chunks
- 1 tsp vanilla
- sugar for dredging
- Preheat oven to 350
- Line two baking sheets with parchment or silicone liners

- Whisk together the flour, baking powder, baking soda, salt and speculaas spice. Set aside
- In a stand mixer with the paddle attached beat together the butter and the sugars until well combined.
- Beat in the egg, then the vanilla.
- Turn off the mixer, add half the dry ingredients and slowly combine. Add in the other half until just mixed.
- Add the dredging sugar into a small bowl.

- Using a small cookie scoop or a teaspoon of dough rolled into a ball, drop the dough into the ball of sugar and roll it until coated.
- Place on the prepared cookie sheet.*

- Bake in the preheated oven for 8 to 14 minutes, rotating the sheets halfway through baking
- Cool on a wire rack
*I tried baking them two ways – as rounds and pressed with a glass to make a flat cookie. Both came out fine but I found I preferred the look of the pressed cookie. You can see both in the finished photo and make your decision.

How Were the Speculaas Sugar Cookies?
Very good. We both have been enjoying them as I noted. They are quite spicy and I really wish I had some vanilla ice cream. I will make these again for sure.
