Thanksgiving can be hard for vegans because many of the classic dishes are not traditionally vegan. For my first Thanksgiving after going vegan, I went into it planning on not having a lot to eat. Over the years, I’ve been able to make more dishes vegan and enjoy Thanksgiving more than ever.

For this recipe, I recommend switching out the russet potatoes for Yukon Gold. Those are the only potatoes we buy because they have more flavor and we love the skin on them.
