Cheesecake Brownies with Fruit

I wasn’t sure what I wanted to bake so I looked around at what I had on hand and looked through my cookbooks and mashed up this recipe. The result gives cheesecake brownies which are a treat that you will find isn’t too sweet, yet hits all the notes you want in a dessert.

Cheesecake Brownies with Fruit

For the Cheesecake Mixture:

For the Brownies

  • 4 oz bittersweet chocolate
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1 cup mixed berries (I used frozen)
  • Make the cheesecake mixture: in the bowl of a stand mixer, beat the egg, then add the cream cheese and superfine sugar beat until smooth.  Add in the vanilla.

Make the Brownie Mixture:

  • In a heatproof bowl, either using the microwave or over a pot of heated water, melt the chocolate and butter.
  • When melted, stir well to combine. Stir in the eggs, one at a time.
  • Mix in the brown sugar, then the flour and the salt.
  • Spread two thirds of the brownie batter into your prepared pan.
  • Dot with the fruit
  • Top with the cheesecake mixture.
  • Drop dollops of the remaining brownie batter over top of the mixture in the pan.
  • Using a butter knife carefully swirl the dollops into the cheesecake layer.

  • Bake in the preheated oven for 30 to 35 minutes until the top layer is set
  • Allow to fully cool in the the pan on a wire rack. Then remove and cut into pieces.

How Were the Cheesecake Brownies with Fruit?

These are tasty, not the most delicious thing I have ever baked, but good. Chocolate is the dominant flavor and the fruit brings a most welcome bit of tartness. I am VERY glad I added it as I don’t think I would like these at all without it to break up the sweet.

They are getting better as they sit. Also, you need to eat them with a fork as they are not the kind of brownie you can pick up with your hand and munch. Just want to put it all out there so you know what you are getting.
