As I mentioned earlier this week I have had this hankering for crab lately and it led me to coming up with a crab recipe that simple yet tasty. That pasta dish went a long way towards satisfying my crab cravings but I still want more crab. What’s a girl to do? Erm, cook more crab? So that is what I did. This time I went rogue with some mini crabcakes that I had purchased from Sizzlefish. So follow along for more ways to cook with crab.

Cod Fillet Topped with Crab

Serves 2 (recipe for Turmeric Honey Rice makes 4 cups)

1 8oz cod fillet (or haddock or other white fish)
5 small crab cakes
or
40z crabmeat mixed with 1 TBS breadcrumbs and 1 TBS mayonnaise

paprika and dried parsley to decorate top

Turmeric Honey Rice
electric pressure cooker
2 cups Jasmine Rice
2 cups water
1 tsp turmeric
3 TBS Honey
2 tsp sea salt

stove top:
2 cups Jasmine Rice
4 cups water (1 1/2 cups at over 3,000 ft)
1 tsp turmeric
3 TBS honey
2 tsp salt

  • Thaw the fillet and the crab cakes if using. 
  • Preheat oven to 400

fish ready to bake

  • Break up the crab cakes and gently spread them over the top of the fillet. 
  • If using the crab meat; add it to a bowl with the bread crumbs and mayonnaise. Mix together and spread on top of the cod.
  • Sprinkle the top of the crabmeat with alternating diagonals of paprika and parsley if desired
  • Bake in the preheated oven for 3o minutes. If your fillet is not fully cooked at this point bake for another 5 – 10 minutes. Baking time is going to be dependent on the thickness of your fillet.
  • Cut the fish in half and serve.

  • I made the husband roasted asparagus to go with the fish; lemon juice, zest and olive oil on the asparagus and cooked it with the fish.

It was Fun and Tasty to Cook with Crab

This turned out quite well and I was very pleased. The half a piece with the crab topping was quite filling with the rice. We were both satisfied with the meal and it was very good. I have more crab cakes to play with and as to whether they will end up as stuffing or be served as intended is yet to be seen.

I am glad I had the mini crab cakes in the freezer because it did allow me to satisfy this crazy crab craving I have been having. So two dinners now and I seem to be OK for a bit. Who knows when the next crab meal will be but of course I will share when it appears on my table!
