Easy Meatball Pita Dinner for Four from ButcherBox Ground Beef

Obviously it will serve the two of us for two nights which is nice as then I get a night off from cooking. No matter what, it was an easy, fun and delicious meal.

Greek Style Meatballs in Pitas

Serves 3 – 4

For the Meatballs:

  • 1 lb lean ButcherBox ground beef
  • 1 egg
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup bread crumbs

For the Tzatziki:

  • 1 medium cucumber
  • salt
  • 1 8 oz tub Greek Yogurt

For the Pitas:

  • lettuce
  • tomatoes
  • onions if desired
  • grated cheddar cheese

Make the tzatziki:

  • Grate the cucumber and place in a linen towel lined colander. 
  • Sprinkle generously with salt.
  • Squeeze grated cucumber to remove as much liquid as possible.
  • Let sit for at least two hours. (I line a strainer with a linen dish towel, place the salted cucumber on the towel and cover. This lets it drain)
  • Removed cucumber to bowl and mix with the Greek yogurt. Add in pressed garlic clove if using. Taste and adjust seasoning if necessary with salt, lemon juice and/or olive oil

Prepare Meatballs

  • Preheat oven to 350
  • In a medium bowl gently mix the ground beef, egg, oregano, thyme, salt, pepper, and bread crumbs.
  • Form into small balls  – about 1 TBS – using a spoon or small cookie scoop.
  • Place balls on baking sheet
  • Bake meatballs in preheated oven for 20 minutes until cooked through.

To Serve Pita Dinner:

  • Set out bowls with lettuce, tomato, cheese, onion (if using), the meatballs and the pitas along with the tzatziki.
  • Let each participant build their pita as they would like using the ingredients in their choice of order

How Was the Easy Meatball Pita Dinner?

It was definitely easy to make and lots of fun to eat. It was a nice change from just making hamburgers or meatballs and spaghetti with a package of hamburger meat from my ButcherBox . Sometimes you just want a change of flavor – ya know?

This recipe definitely goes a different route and it was truly a yummy meal. Since there are only two of us there were leftovers so we had them the next night. That gave me two nights of easy dinners!
