Fresh Cucumber Salad

With Memorial Day this weekend and summer activities soon coming I wanted to share one of my favorite recipes, a fresh cucumber salad. Believe it or not but my diet revolves around fruit and fresh veggies. I can’t seem to get enough. If you are looking for the perfect salad this summer, this will soon become your favorite dish.

Cucumber Salad

This cucumber salad is like an explosion of Summer in a bowl!  It’s so delicious, and it’s cool, and crunchy, and a little sweet, and really healthy. 

Its bite-size pieces make it a wonderful way for little ones to get some needed vegetables without all the fuss.

It’s colorful, and since we eat first with our eyes, it looks like something we will love, and can’t wait to eat.  This is definitely one to keep.

Cucumber Salad

HERE’S WHAT YOU NEED:

  • 1 pound of Baby Cucumbers – washed and sliced
  • 1 pound of Cherry Tomatoes – rinsed and cut in half
  • 1 small onion – sliced in thin slices
  • DRESSING:1/2 cup of Balsamic vinegar
  • 1/3 cup of Olive Oil
    1 teaspoon of Italian seasoning
  • 1/4 cup of sugar
  • Garlic salt – to taste
  • Seasoned Pepper – to taste

Wash the Baby Cucumbers, and Cherry Tomatoes in cool running water, and lay them on paper towels to dry.

Slice the Cucumbers in thin slices, and place them in a serving bowl. 

Cut the cherry tomatoes in half, and place them on top of the cucumbers.

Peel and slice the onion in thin slices, and place in the bowl.  Sprinkle the cucumbers, tomatoes, and onion with the garlic salt and seasoned pepper. 

In a small bowl, place the Balsamic Vinegar, and Olive Oil, and whisk together.  Add the Italian seasoning, and sugar, and whisk until the sugar is dissolved. 

Pour the dressing over the cucumbers, tomatoes, and onion, and toss until coated in the dressing.  Serve immediately, or refrigerate until time to serve.  Enjoy!
