This sausage pasta skillet combines Italian sausage, cheese tortellini, and roasted sweet potatoes and broccoli. Garlic and rosemary are added to create an amazing flavor. 

This is a filling meal that your whole family will love. They’ll be coming back for seconds! This recipe dirties a few dishes, but I promise it’s worth every bit of cleanup. It’s a family favorite comfort food of ours that can be made any time of the year.

Ingredients You’ll Need for This Sausage Tortellini Skillet Recipe with Roasted Vegetables

Here are the ingredients you’ll need to make this great meal. Although the garnishes are optional, I highly recommend adding them because the flavor is unbeatable. 

Ingredient list:

  • 1 pound ground Italian sausage
  • 1 pound (16 ounces or about 4 cups) cubed sweet potato
  • 1 pound (16 ounces) broccoli florets (fresh or frozen)
  • 2 tablespoons olive oil 
  • 4 tablespoons butter
  • 1 tablespoon minced garlic
  • 12 ounces cheese tortellini
  • Freshly grated parmesan cheese to garnish, optional
  • Fresh rosemary to garnish, optional

  • 2 sheet pans (or one extra large sheet pan)
  • 1 large skillet
  • 1 large pot for boiling

Additions and Substitutions

There are many additions and substitutions you can make to this recipe to make it fit your needs. Since the ingredients are so simple, you can easily swap them out for like ingredients. 

Italian Sausage

You can substitute the Italian sausage in this recipe with any other ground sausage, ground beef, or other meat of your choice. You can even omit it all together for a meatless meal. You can also turn up the heat by using hot Italian sausage. 

Vegetables

You can add to or switch up the roasted vegetables in this meal. Any veggie that can be roasted would work well in this recipe. Some good substitutions would be carrots, brussel sprouts, or cauliflower. 

You can also add in fresh vegetables like red bell pepper or green peppers to give this recipe a bit of freshness. 

Cheese Tortellini

I find the cheesy tortellini to be the VIP of this recipe. However, you can substitute it if you’d like. You can use any other flavor of tortellini or different pasta of your choice. I would still cook whichever pasta you are using al dente and adjust the butter and garlic if you change the amount. 

I’m using dry tortellini in this recipe. You can use fresh tortellini or even frozen tortellini in its place. You could even use Italian sausage tortellini and skip the ground sausage. 

Herbs

The garlic and rosemary really bring this dish together. However, you can substitute herbs and spices of your choice to create a different flavor in this meal. 

Play around with seasonings to find what you like best. Italian seasoning or fresh parsley would go really well in this dish, too. Red pepper flakes can be added at the end for a boost of heat. 

Creamy

You could turn this into a creamy dish by adding heavy cream to the butter when heating it over the skillet. At this point you could even add cream cheese or other cheeses to completely switch up this meal. 

How to Make This Tortellini and Sausage Skillet Meal with Roasted Veggies

There are a few steps to cooking this recipe, but don’t let that scare you away. The steps are simple and easy to execute. 

You’ll be enjoying this delicious meal before you know it! 

You’ll be cooking multiple things at once so the dish really comes together quite quickly. This is an easy weeknight dinner that can be made when you have a few extra minutes to spare. 

Step One:

Preheat your oven to 375?.

Step Two:

Place your cubed sweet potatoes on your sheet pan and coat with one tablespoon of olive oil. Place your broccoli on a second sheet pan and coat with one tablespoon of olive oil. 

Put both in the oven to roast for about 35-40 minutes. They will be ready when they are fork tender. 

Tip: You can combine the veggies if you have an extra large sheet pan. However, you’ll want to make sure you don’t overcrowd the vegetables so they roast evenly. 

Tip: Cooking times will vary based on your oven and how large your vegetables are. Keep an eye on them and take them out when tender. 

Step Three:

In a large skillet, cook your sausage over medium heat to medium-high heat until cooked thoroughly. This will take about 10 minutes. You can do this while your vegetables are roasting.

Step Four:

While your vegetables are roasting and your sausage is cooking, heat a pot of water to boil your package of tortellini. Boil it per your package directions to an al dente firmness. The cooking time is usually between 9-12 minutes. 

Step Five:

After the sausage and tortellini are cooked, remove the sausage from the pan and set it aside in a bowl. Add the butter and garlic to the skillet and simmer for two minutes until combined and fragrant.

Step Six:

Add your cooked tortellini to the skillet of butter and garlic. Stir until the noodles are thoroughly coated.

Step Seven:

Add the cooked sausage and roasted vegetables into the skillet and combine carefully. Top your dish with grated parmesan and chopped fresh rosemary to finish it off. 

Note: if you don’t have a large enough skillet to combine all the ingredients at the end, you can serve the tortellini and sausage mixture over the roasted vegetables separately. 

Storage

You can store this sausage tortellini skillet recipe in an airtight container in the fridge for up to four days. However, it’s best eaten fresh. 

You can freeze the cooked recipe and thaw it out and reheat it when you’re ready to enjoy it. The meal should be frozen in an airtight container or freezer bag and should be used within two months.
