 1 can black beans (15 oz drained and rinsed)

 1 cup mushrooms (finely chopped)

 ½ cup breadcrumbs

 ¼ cup red onions (finely chopped)

 2 garlic cloves (minced)

 2 tbsp fresh parsley (chopped)

 1 tbsp soy sauce or tamari

 1 tsp smoked paprika

 ½ tsp ground cumin

 Salt and pepper to taste

 2 tbsp olive oil (for cooking)

 Vegan burger buns and toppings of choice (lettuce, tomato, vegan mayo, pickles, etc.)

In a large mixing bowl, mash the black beans until mostly smooth, leaving some chunks for texture.

Add the finely chopped mushrooms, breadcrumbs, red onion, garlic, parsley, soy sauce, smoked paprika, cumin, salt, and pepper. Mix until all ingredients are well combined.

Divide the mixture into four equal portions and shape each portion into a patty.

Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 6-7 minutes on each side or until they are golden brown and cooked through.

While the patties are cooking, prepare your burger buns and toppings.

Once the patties are done, assemble your burgers. Place a patty on the bottom half of each bun, add your favorite toppings, and then top with the other half of the bun. Serve immediately with a side of your choice.
