If you like to cook you might have come across one of the latest additions to the home cook’s arsenal – sous vide cooking. I know it’s a method that has intrigued me for quite some time. I’ve read about it on blogs and seen it on my favorite cheffy shows.

What is Sous Vide Cooking?

Sous vide is French for “under pressure.” To effectively cook sous vide you also need a vacuum sealer so you can put the food you would like to cook in a vacuum bag. Then the bag is immersed in water warmed to a chosen temperature and the meat/fish/vegetables are left to cook for a period of time. Marinades and flavorings are often included in the vacuum bag.

It’s an incredibly gentle way to cook foods so meat and fish come out moist and perfectly cooked. The vacuum seal on the bag helps the marinades and spices really get into the food being cooked. The easiest way for a home cook to use this method is with a sous vide stick like the one I received from Frieling.

Frieling Sous Vide Stick

You can tell when you take the Frieling sous vide stick out of the box that it is a well made appliance.  I did sit first with the instruction booklet and will admit to a certain amusement to some of the instructions but they were written clearly enough that I could operate the sous vide stick without asking the hubby for help. I will tell you that this is somewhat remarkable for I am known for my inability to figure out how to make things work. So bravo to Frieling for this!

If you cook steak or pork sous vide you can finish it on a grill pan if you would like to add that lovely sear most people like on meat. The same thing if you would like a crispy skinned fish.

What Can You Cook Sous Vide?

I am just beginning to learn the possibilities! I new I could cook meats and fish. I just recently found out I could cook vegetables sous vide. I was surprised to find out that cheesecakes can be made sous vide! I am going to have to learn more about this for sure. But if you think about it, it does make a little bit of sense as they are often cooked in a water bath – right? If I try it I will surely let you know. For now I have a salmon recipe for you as the first thing I tried was a dinner for the hubby.

Salmon with Lemon Thyme Butter Sauce

Serves 1

  • 1 6 oz salmon filet
  • 1 tsp lemon zest
  • 1 TBS lemon juice
  • 2 tsp unsalted butter
  • 1 TBS dry sherry
  • 1/2 tsp salt
  • 1 tsp thyme
  • 1 small bell pepper cut into strips
  • 1/4 small onion cut into strips
  • Prepare the sous vide stick by setting it on a pot of water or a heavy duty, heat safe plastic container and set the temperature to 133°

  • Add the lemon zest, lemon juice, sherry, butter, thyme and salt to a small sauce pan. Heat until the butter melts and set aside.

  • Pat the salmon dry and add it to a vacuum seal bag. Add the pepper and onion then pour in the butter sauce. Seal the bag.

  • Add the bag to the heated water and set the timer according to the thickness of your filet. Mine cooked for 33 minutes
  • Carefully remove the bag, open it and remove the contents

How Was the Sous Vide Salmon?

The hubby loved his salmon dinner! He said the salmon was moist and the flavor was delicious. He told me he liked it much better than the other ways I usually cooked it for him. The vegetables were crisp/tender and he mentioned that they were quite tasty too.

I served it on my turmeric honey rice which is quite easy to make; I just add 1 teaspoon of turmeric to the two cups of water , 1 tsp of salt and two cups of rice in the instant pot. When it is done cooking I add three tablespoons of honey, 1/2 cup of dried cranberries and 1/2 cup of pistachios and stir. It’s seriously good rice.
