Brenda Gantt Chicken and Dumplings

Ingredients

  • 4 chicken thighs
  • 1 chopped onion
  • 2 finely chopped garlic cloves
  • Salt & pepper- to taste
  • ½ cup butter
  • 1 cup flour
  • ½ cup buttermilk
  • ½ cup heavy cream
  • 2 tsp baking powder
  • ¼ teaspoon baking soda

Instructions

  • In a large pot, combine the chicken, half onion, and garlic with water. Bring it to a boil. Cook until the chicken until it’s done.

  • When the chicken is done, place it on another cooking pan, let it cool slightly, then shred and set aside.

  • Strain the stock and get rid of all the solids. Add the stock back into the pot and let simmer. Add salt and the rest of the onions in chicken fat; Cook until softened.

  • Add half of the flour and stir continuously. Now whisk, so no lumps are formed. Cook for another 10 minutes.
  • Form a dough for dumplings. Whisk baking soda, baking powder, rest of the flour, salt, and pepper. Add buttermilk and whisk continuously in a bowl.

  • Add tablespoon-sized portions of dough to the stew. They will rise and puff up as they cook. Remember, Reduce heat to low and cover the pot. Cook for ten more minutes. After that, check if the dumplings are done.
