Ingredients

  • 26-32 ounces (one large bag) frozen hash browns
  • 2 tablespoons olive oil
  • 2 pounds ground pork sausage
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 medium yellow onion
  • 4 ounces fresh spinach
  • 8 large eggs
  • 1/2 cup half and half
  • 2 cups (8 ounces) cheddar cheese divided in half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional Garnishes

  • Chopped green onions, diced tomatoes, sour cream, salsa, cilantro, parsley, diced peppers, hot sauce

Instructions

  • Mix the olive oil and hash browns thoroughly and then brown the hash browns. You can do this in the oven set at 425? in your casserole dish while you move on to browning the sausage. Or you can do this in the skillet you’ll use for the sausage later.
I like to brown potatoes in the oven while I’m working on the rest of the recipe. Browning the hash browns helps keep them from getting soggy and adds some texture and flavor.
It takes about 30 minutes to brown in the preheated oven and about 15 minutes in a hot skillet.
You’ll turn the oven down to 375? to bake the rest of casserole.
  • While the hash browns are baking, cook the sausage, pepper, and onion in a skillet until the sausage is brown and cooked through and the vegetables are soft. This will take about 15 minutes.
  • While the sausage is cooking, whisk the eggs in a large bowl. Then mix in the half and half, spinach, and 1 cup (half) of the shredded cheese.
  • Once the potatoes, sausage, and egg mixture are ready, you can start layering them in the baking dish. Add the sausage mixture over the top of the browned hash browns. Then pour egg mixture over the top of the sausage and hash browns.
  • Place the casserole in the 375? oven. Bake the dish for about 30 minutes or until eggs are set and cooked through.
Add the remaining cup of shredded cheese to the top of the dish and bake for another 5 minutes or until the cheese is melted.
Top with any additional toppings before serving.
