Easy, Delicious Ground Beef Fajitas That Can Feed a Crowd
Easy, inexpensive fajitas that will feed a crowd and taste amazing!

- 1 lb ground beef
- 2 cans black beans
- 1 can Rotel tomatoes and chilies
- 9 bell peppers
- 4 sweet onions
- 2 tbsp minced garlic
- 2 tbsp olive oil
- Toppings of your choice
For the Vegetables
Preheat your oven to 400?.
Slice the bell peppers and onions into even strips.
Mince the garlic and mix it with the olive oil.
Drizzle olive oil onto the vegetables and mix to coat them.
Roast the vegetables for about 15 minutes or until desired tenderness is reached.
For the Meat
Brown the ground beef in a skillet on medium heat.
Drain any excess grease and add fajita seasoning per the packet instructions.
Drain and rinse the beans and add them to the ground beef.
Add a can of Rotel to the beans and ground beef.
Stir and simmer the mixture until cooked through and hot.
