Easy, Delicious Ground Beef Fajitas That Can Feed a Crowd

Ingredients

  • 1 lb ground beef
  • 2 cans black beans
  • 1 can Rotel tomatoes and chilies
  • 9 bell peppers
  • 4 sweet onions
  • 2 tbsp minced garlic
  • 2 tbsp olive oil
  • Toppings of your choice

Instructions

For the Vegetables

  • Preheat your oven to 400?.
  • Slice the bell peppers and onions into even strips.
  • Mince the garlic and mix it with the olive oil.
  • Drizzle olive oil onto the vegetables and mix to coat them.
  • Roast the vegetables for about 15 minutes or until desired tenderness is reached.

For the Meat

  • Brown the ground beef in a skillet on medium heat.
  • Drain any excess grease and add fajita seasoning per the packet instructions.
  • Drain and rinse the beans and add them to the ground beef.
  • Add a can of Rotel to the beans and ground beef.
  • Stir and simmer the mixture until cooked through and hot.

Additionally

  • Prepare any additional toppings and set them out.
  • Warm the tortillas in the oven or microwave before serving.
  • Serve the fajitas
