Apple and Pear Upside Down Cake Recipe

I had some fruit that needed to be used and after some thought as to how to do that I decided to bake an apple and pear upside down cake. Don’t ask me why I decided to do this but I am glad I did – the cake was really tasty and we both enjoyed it.

Apple and Pear Upside Down Cake Recipe

Serves 10 – 12

  • 1 large red apple
  • 1 bosc pear
  • 1 1/2 cups all purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 tsp grated nutmeg
  • 1 stick (4 oz) unsalted butter – soft but cool
  • 2 large eggs – straight from the refrigerator
  • 3/4 cup sour cream
  • 1 TBS vanilla

For the Topping

  • 3/4 cup packed dark brown sugar
  • 1/8 tsp salt
  • 1/4 cup heavy cream
  • Peel and core the apple and pear and slice them very thinly (1/8″)
  • Preheat the oven to 350
  • Grease and line a 10″ cake pan with parchment paper. Then grease the parchment
  • Sift the measured flour into the bowl of your stand mixer. Add the sugar, baking powder, salt, nutmeg, and softened butter.
  • Mix on low with the paddle until the butter disappears into the flour mixture – about two minutes.
  • Add the eggs, sour cream, and vanilla all at once to form a grainy batter about 20 seconds.
  • Scrape the bowl. Remove the paddle, scrape it down and then fold the batter two or three times to make sure all is incorporated making sure to scrape the bottom of the bowl.

Make the Topping

  • In a small bowl stir together the brown sugar, salt and heavy cream.
  • Pour into the prepared pan.

  • Carefully arrange the sliced fruit over top in a design of your choosing.
  • Gently pour the batter over top and smooth.

  • Tap on the counter once or twice to settle.
  • Bake in the preheated oven until firm and browned, about 55 minutes.
  • Cool on a wire rack for 5 minutes.

  • Run a butter knife around the edge of the pan and then carefully invert on the rack to cool completely.
  • If desired, serve with freshly whipped cream

How Was the Pear Apple Upside Down Cake?

It was really delicious. The cake had a wonderful nutmeg flavor that was delightful with the caramelized fruit on top. The whipped cream was delicious but the cake is also very good without it. I can also tell you that the cake ages well and actually gets better as it sits. 

We do like cakes with fruit around here. Cherry Cake is a favorite and I can’t wait for the strawberries to come in so I can go crazy baking all of the strawberry treats.
