The hubby had a meeting and he asked me to make him a treat to take. It is well known that I love a good bundt cake. They are easy to make, provide a nice number of servings and can be dressed up like a Banana Split Bundt Cake or simple and down to earth like oh, an applesauce bundt cake. Almost every year I end up canning applesauce so I only need go to the pantry for the main ingredient. I wasn’t asked to make something fancy so I thought the warm spices and flavors of this cake would be perfect.

Applesauce Raisin Bundt Cake

Serves 10 – 12

1 cup unsalted butter at room temperature, plus some to grease the bundt pan
2 1/4 cups white whole wheat flour, plus some to dust the bundt pan
1 1/2 tsp cinnamon
1 tsp ground cloves
1 tsp baking soda
1 tsp salt
1 cup granulated sugar
1/2 cup packed brown sugar
4 eggs
1 1/2 cups applesauce
1/2 cup raisins
1/2 cup walnuts, toasted

Preheat oven to 350°
Butter the bundt pan and dust with flour.
Whisk the flour, salt, baking soda, cinnamon and cloves in a bowl.
In a stand mixer with the paddle attached cream the butter and the sugars until light and fluffy.
Add the eggs, one a time mixing well after each addition.
Stir in the applesauce.
Add the flour mixture and mix on low until just combined.
Remove the bowl from the mixer and add the raisins and walnuts and stir them in until combined.
Add the batter to the prepared pan and and smooth.
Bake in the preheated oven for 50 – 55 minutes until the cake is lightly browned and a tester comes out clean.
Let cool for 15 minutes and remove from the pan.

Dust with confectioner’s sugar before serving.

How Was the Applesauce Raisin Bundt Cake?

I do not know. All I can tell you is that it smelled heavenly while it was baking and that none came home. That is generally my marker for a well received treat for the hubby’s meetings. I don’t think I’ve sent a bundt cake in that hasn’t been devoured. I know the citrus bundt cake I made was particularly popular. Bundt cakes are easy to make and the flavor options are almost unlimited.
