There are times that I love spending hours in the kitchen cooking a special meal and then there are other times I just want to make an easy weeknight salmon dinner. The fish dish I made last night combined all of our favorite flavors in a very quick meal that came together in 30 minutes. Sometimes these quick and easy meals are just as tasty as the complicated dinners.

Salmon with Honey Lemon Vinaigrette

Serves 2
  • 2 6 oz salmon fillets
  • juice of half a lemon
  • 2 tsp honey
  • 1 TBS olive oil
  • 1 tsp sea salt
  • freshly ground pepper
  • salt
  • oil if needed for the pan
Roasted Carrots
  • 2 cups carrot coins
  • 1 tsp olive oil
  • 1 tsp salt
For the Rice
  • 2 cups jasmine rice
  • 2 cups water
  • 1 tsp salt
Preheat oven to 350° While the oven is preheating make your rice either on the stove top or in an electric pressure cooker Make the roasted carrots – mix the carrot coins with the oil and salt and place in a roasting dish in the preheated oven to cook Let them roast for 10 minutes then start the fish. Heat a cast iron or other heavy saute pan over medium high heat until hot.
While the pan is heating mix the honey and salt into the lemon juice until the honey is dissolved. Add the olive oil and whisk or stir until emulsified Salt the salmon on both sides If you need to add some oil to your pan do so – as little as is necessary. Place the fillets in skin side up. Let the salmon cook for about 2 minutes (or longer depending on thickness of the fillets) Carefully turn the fillets over
Drizzle a couple of spoonfuls of the vinaigrette on the salmon fillets – it will smoke so be sure to have your fan on. Cook for two minutes. Place in the oven for about 5 minutes to finish cooking. Serve on the rice with the rest of the vinaigrette.

How Was the Salmon with Lemon Vinaigrette?

In this dish, the vinaigrette is still tart which really complements the salmon. The carrots were just cooked through and it is delicious to pour a bit of the dressing on them as well. This easy weeknight salmon dinner doesn’t take long to make but is full of flavors. A real win-win! This simple lemon vinaigrette would also work very well with other fish like Chilean sea bass or trout. It’s a quick and easy flavor booster to help make a tasty dinner in very short order!
