My First Video Recipe – Mahi Mahi with Wholly Red Pepper Mango Pepper Salsa Salad

OK – it’s FAR from perfect.
It’s hard to hold a video camera, talk and make dinner.
But heh, I did my best.


The hubby had gone hiking with friends – I’ll have photos from that in a later post. HE SAW MOUNTAIN GOATS! How cool is that?! I knew he would be hungry but I also knew that given the heat of the day he wouldn’t want anything heavy for dinner so I came up with a nice, protein filled salad to make him happy. He does love fish! Thanks to Anderson Seafoods I had a lovely piece of mahi mahi in the freezer so I took it out to thaw. I also had a fantastic selection of salsas from Wholly Guacamole. A delicious dinner salad was born.



I give you Mahi Mahi Salad with Wholly Red Pepper and Mango Salsa Salad.


You will need:


1 8oz fillet mahi mahi
poaching liquid – equal amounts orange juice, white wine and water to just cover the fillet
1 tbs Herbes de Provence


1/4 cup Wholly Red Pepper Mango Salsa
1/4 cup raisins
2 stalks celery chopped
1/4 cup toasted walnuts, chopped
1 tsp mayonnaise
2 tsp dijon mustard
salt and pepper to taste


2 TBS liquid from salsa
1 TBS rice vinegar
1 1/2 TBS extra virgin olive oil
salt and pepper to taste


mixed lettuce and spinach greens


To poach the fish:


Mix the water, orange juice and wine with the herbes de Provence and some salt and pepper in a pot. Add the mahi mahi. Bring to a simmer and reduce the heat and cook until the fish is just cooked. It should still be very moist. Mine took about 7 minutes. Immediately put the fillet in a bowl and put the bowl into another bowl that is full of ice water to stop the cooking process.  Chill the fish in the refrigerator until you are ready to use it.


This is my very first try at this so please forgive the errors. I will hopefully get better and I might just go back to photos….heh

He really did enjoy it. It said it was quite refreshing after his hike and that the flavors were perfect together. The mahi was as delicious chilled as it ever was cooked. I was very happy to hear that. He cleaned his plate!
