Ever since we moved into our home I have been adoring everything farmhouse and when I think of Apple pie, I think of just that. A beautiful farmhouse. Today I wanted to share with you an amazing recipe that is perfect for the fall season and Thanksgiving the Farmhouse Apple Pie Cupcakes.

For this recipe, you can simply use a box of spice cake mix for the cupcake themselves. Or you can find your favorite recipe online. I opted for the boxed mix as most of us during the holiday are so rushed with everything. It just makes everything so much simpler.

What really sets this cupcake apart from others is the beautiful topping, which is again super easy to make. There are really three parts to the topping on this cupcake. You have the icing, of course, then the apple topping and lastly a beautiful wedge of cinnamon and sugar pie crust.

Caramel Apple Pie Cupcakes

Ingredients

The Cake Itself

  • 1 box of spice cake mix 3 large eggs 1/2 C unsalted sweet cream butter, softened 1 C whole milk
  • 3 large eggs
  • 1/2 C unsalted sweet cream butter, softened
  • 1 C whole milk

Apple Pie Topping

  • 2 tbsp unsalted butter
  • 6 cups peeled and chopped gala apples
  • 1/2 C sugar
  • 1/2 tsp ground cinnamon
  • 1 1/2 C water
  • 2 tsp cornstarch

Frosting Ingredients

  • 1 C unsalted sweet cream butter, softened 2 1/2 C powder sugar 1 tsp vanilla 1 tbsp ground cinnamon 3-5 TBSP heavy whipping cream

Cinnamon Sugar Pie crust Ingredients

  • 1 premade pie crust, unrolled 1/4 C unsalted sweet cream butter, melted 1/2 C sugar 3 tbsp ground cinnamon 1 cookie sheet fitted with parchment paper

Instructions


Cupcake Directions:


Preheat oven to 350 degrees
Using a standing mixer, combine the cake mix, eggs, milk and butter and mix until combined
Scoop cupcake batter into the liners, filling 3/4 way full
Bake in the oven for 21 minutes.
While the cupcakes are baking, make the apple pie filling

Apple Pie topping Directions:


Using a medium pot, melt the butter
Stir in the apples, sugar and cinnamon.
Mix in 1 C of water until combined and bring to a low simmer
In a small bowl, combine the remaining 1/2 C of water with the cornstarch, and whisk lightly until smooth.
Add the cornstarch mixture to the apples and cook 1-2 minutes more, until the mixture has thickened.
Let cool completely

Cinnamon Frosting Directions:


Using a stand mixer, combine all ingredients and mix on medium speed.
Mix until you see stiffed peaks in your frosting and scoop into piping bag

Pie Crust Topping:


Preheat oven to 350
Mix the cinnamon and sugar together
Unroll the pie crust and place it onto the cookie sheet
Brush the melted butter onto the top of the pie crust
Sprinkle the cinnamon sugar mixture onto the pie crust
Place into the oven for about 10-15 minutes or until lightly golden brown
Allow to cool to room temperature
Cut pie crust into triangles

Decorating ingredients and Directions:


1 squeeze bottle of salted caramel
1/4 C graham cracker crumbs
Using the frosting, pipe the frosting onto the cupcakes, making sure to keep the tip of the frosting flat so that the apple pie filling can sit on the frosting
Scoop about 1tbsp of the apple pie filling onto the top of the cupcakes
Drizzle the salted caramel onto the top of the cupcakes
Place a Pie crust into the back of the cupcake
Sprinkle some graham cracker crumbs onto the top of the cupcakes
