This easy ground beef and mushroom casserole is in our regular meal rotation. It’s delicious, filling, and on the healthier side of comfort food. This casserole is quick and easy to throw together any day of the week.

Ingredients

The ingredients for this hamburger and mushroom bake are really simple. You probably have most of them on hand already!

For this recipe, you’ll need:

  • 1 pound ground beef
  • Salt and pepper to taste (optional)
  • 1 tablespoon minced garlic
  • 1 medium yellow onion
  • 1 can (10.5 ounces) of golden mushroom soup
  • 2 cups beef broth
  • 2 cups instant rice
  • 1/2 cup plain breadcrumbs

Ingredient Substitutions and Additions

Like most casseroles, this recipe is easy to adjust to your taste. Many substitutions and additions can be made to change up this simple recipe. 

Meat

You can use any meat you’d like in this recipe. Good substitutions would be sausage or ground turkey. You can omit meat altogether as well.

Vegetables

The only vegetables in this beef and mushroom casserole are the mushrooms and onion. However, you can add any vegetable that you would like to enhance the recipe. 

You’ll need to determine if you need to cook the vegetables prior to adding them to the casserole dish since the bake time is pretty short at 25 minutes. Good vegetable additions would be carrots, peas, or broccoli. 

Soups

The golden mushroom soup used in this recipe really increases the mushroom flavor and brings some other flavors with it. It can be substituted or omitted if necessary. A good substitute would be cream of mushroom soup. 

Rice

The rice used in this recipe is instant white rice. The liquid needed to cook this rice was a 1:1 ratio. That is why the recipe calls for two cups of rice and two cups of broth. 

If you are changing the type of rice, you’ll need to take into account the amount of liquid the rice calls for and the recommended cooking time to make sure it is tender. 

Toppings

You can use any flavor of breadcrumbs in place of the plain breadcrumbs used in this recipe. Italian or garlic would be great substitutions. You could also choose to use cracker crumbs or omit the topping altogether.

How to Make Ground Beef and Mushroom Casserole With Rice

To make this beef, mushroom, and rice casserole, you’ll need to follow the following steps. After you make this recipe once, I’m sure it will be one of your regular meals! It’s simple and easy, just follow the steps below.

Step One

Preheat your oven to 350?.

Step Two

Brown your beef along with your garlic and onion in a pan. This should take about 7-10 minutes or until the beef is cooked through and your onions are tender. 

Step Three

Add the sliced mushrooms and can of golden mushroom soup to the pan with your beef. Simmer these together for five minutes.

Step Four

Move the mushroom and ground beef mixture to a casserole dish. Add in your instant rice and beef broth and stir everything together. 

Step Five

Top the beef and mushroom mixture with your breadcrumbs. 

Step Six

Bake the casserole for 25 minutes at 350? or until the rice is tender and the breadcrumbs are golden brown.

How to Serve This Mushroom and Hamburger Meat Casserole

This casserole is perfect on its own! However, you can serve it with just about anything you want. A side salad or dinner roll would go perfectly with this dish. 

To serve the casserole, simply scoop it out of the pan and onto a plate. If reheating leftovers you can warm it in the microwave or place it back in the oven at 350? for about 10 minutes or until it is heated through.

How to Store Beef and Mushroom Casserole

This recipe makes great leftovers! My family eats this for days without getting bored. To store leftovers simply place your casserole in the refrigerator in an airtight container for 2-3 days. 

Tip: I love using casserole dishes that come with lids to store big meals like this for later. It’s so convenient to not have to dirty more dishes. 

This recipe will also hold up well to freezing for later. Let it cool completely before placing it in the freezer in a container or covered with foil. 

Casseroles like this are typically good in the freezer for about two months. To reheat, take it out of the freezer and heat in the oven at 325-350? for 45 minutes to an hour until heated through.
