Ground Beef and Mushroom Casserole

This comforting casserole is the perfect meal for a quick, weeknight dinner. It's easy to throw together and get on the table quickly. This is a great dish for leftovers or to make ahead of time!

Ingredients

  • 1 pound ground beef
  • salt and pepper to taste (optional)
  • 1 tablespoon garlic minced
  • 1 medium yellow onion diced
  • 1 pound mushrooms sliced
  • 10.5 ounces golden mushroom soup (one can)
  • 2 cups beef broth
  • 2 cups instant rice

Instructions

  • Preheat your oven to 350?.
  • Brown your beef along with your garlic and onion in a pan. This should take about 7-10 minutes or until the beef is cooked through and your onions are tender.
  • Add the sliced mushrooms and can of golden mushroom soup to the pan with your beef. Simmer these together for five minutes.
  • Move the mushroom and ground beef mixture to a casserole dish. Add in your instant rice and beef broth and stir everything together.
  • Top the beef and mushroom mixture with your breadcrumbs.
  • Bake the casserole for 25 minutes at 350? or until the rice is tender and the breadcrumbs are golden brown.
