Layered Banana Bundt Cake – Banana and Chocolate Banana

As these things tend to be, I had some bananas turning brown so I decided to bake. I looked through my cookbooks and then I turned a plain banana bundt cake into a layered banana bundt cake with a mix of chocolate and plain banana layers. It’s a deliciously moist cake that I will make again. The recipe is adapted from one of my favorite cookbooks, (affiliate link) The Perfect Cake from America’s Test Kitchen.

Layered Banana Bundt Cake

serves 10 – 12

  • 12 TBS butter, at room temperature
  • 1 cup sour cream, at room temperature
  • 4 very ripe bananas
  • 2 1/4 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups packed brown sugar
  • 1 TBS vanilla
  • 5 large eggs, at room temperature
  • 1/4 cup cocoa powder
  • 3 oz semi sweet chocolate, melted then cooled
  • confectioner’s sugar for dusting
  • Preheat oven to 350
  • Thoroughly butter and flour a 12 cup bundt pan.
  • Whisk together the flour, salt and baking soda in a medium bowl.
  • In a stand mixer with the paddle attached beat the butter, sugar, and vanilla on medium high speed until light and fluffy.
  • With the mixer on medium, add the eggs, one at a time until well combined.
  • Add the crushed, peeled bananas beat for about 1 minute.
  • Turn speed to low and add flour in three additions and sour cream in two, beginning and ending with flour.
  • Divide batter in half. Add the melted chocolate and cocoa powder to one half of the batter and combine well.

  • Add the batter to your prepared bundt pan, vanilla first then the chocolate. Tap the filled pan a couple of times on the counter to settle the batter.
  • Bake in the preheated oven for 60 – 70 minutes. Turn the pan about halfway through. Check for doneness at 60 minutes and bake for longer as needed.

  • Cool on a wire rack for 20 minutes then unmold and cool completely
  • Dust with powdered sugar before serving.

How Was the Layered Banana Bundt Cake?

This is one tasty bundt cake. It’s so very moist and the banana flavor comes through – even in the chocolate portion. It’s even better on the second day. I love banana cakes so I sort of already knew I would enjoy this treat but that doesn’t make it any less delicious. I’ve made a banana split bundt cake, a chocolate banana bundt cake and even a tahini banana cake. Banana is a favorite flavor around this household.
