I was feeling a little bit lazy about cooking dinner the other night and yet dinner still needed to be cooked. We have all been there, amirite? I had pulled a chicken breast out of the freezer to thaw so I had a world of possibilities open to me; I could go stir fry with Chicken and Broccoli with Cashews,  or easy and flavorful with Chicken Paprikash or come up with something I hadn’t done before. And the latter is what won. I made a sheet pan chicken dinner for quite possibly the first time ever. It was so easy to make and it turned out quite tasty.

Sheet Pan Chicken, Potatoes and Broccoli

Serves 2 – 3

  • 1 large chicken breast
  • 1 large Yukon gold potato
  • 2 cups broccoli crowns (I used frozen)
  • 2 TBS olive oil
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1 clove garlic, pressed
  • Preheat oven to 400

  • Peel the potato and cut into 1/2″ pieces, add to a large bowl with chicken.

  • Cut the chicken breast into bite sized pieces and add to the bowl with the potatoes.

stir in spices and salt

  • Stir in the paprika, thyme, salt, garlic, and olive oil.

  • Stir in the frozen (or fresh cut broccoli)

  • Pour the chicken and vegetables on to a sheet pan and shake so that no pieces are on top of another.
  • Bake in the preheated oven for 6 minutes, turn the tray and bake for 6 more minutes.

  • Remove from the oven, taste and adjust seasoning if necessary. 
  • Serve

How Was the Sheet Pan Chicken Dinner?

Oh, this was a delicious dinner. I love how it came together so easily and yet produced a really tasty meal. In truth I was a little afraid that the potatoes wouldn’t be done when everything else was but they were perfect.

To make sure that happens be sure to cut the potatoes into smallish pieces – about half an inch. That way you can be sure that the potatoes will be cooked when the chicken and broccoli are done.

Convenience of a Sheet Pan Meal

Sheet pan dinners are so convenient! They are easy to prepare; take this one – all of the ingredients went into one bowl to be seasoned and then they were cooked on one pan in the oven. How simple is that?

It sure makes for easy clean up! There was the sheet pan, the bowl, our dinner dishes and a few utensils. It hardly took me any time at all to get the kitchen and dining room back in order after we ate. You have to love a meal that comes together quickly, is easy to make and is delicious!
