Mix all the ingredients by hand, or you can take it over to the mixer and mix on medium speed for about five to seven minutes.

Lightly flour your clean working surface and remove the dough from the bowl and transfer it to your working surface. Lightly knead it to remove some of the air and shape it into a rectangular shape. Cut your dough into 12 equal pieces and shape each one into two to three-inch rounds. Place them on your prepared cookie sheet about two inches apart. Using your hand, press down on each piece until you have a four to five-inch round. Cover them once again with a clean kitchen towel or with plastic wrap, place them in a warm dry place for about 30 minutes or until they double in size. Using a basting brush, add a small layer of the piloncillo water or your sugar water over each of the pieces. This step is optional, but it gives the bread a beautiful golden brown color. Bake them at 375 degrees for 20 to 25 minutes or until they’re golden brown on the top.
