Cut your dough into 12 equal pieces and shape each one into two to three-inch rounds. Place them on your prepared cookie sheet about two inches apart. Using your hand, press down on each piece until you have a four to five-inch round. Cover them once again with a clean kitchen towel or with plastic wrap, place them in a warm dry place for about 30 minutes or until they double in size. Using a basting brush, add a small layer of the piloncillo water or your sugar water over each of the pieces. This step is optional, but it gives the bread a beautiful golden brown color. Bake them at 375 degrees for 20 to 25 minutes or until they’re golden brown on the top.
