Roasted Veggie & Goat Cheese Salad

So I eat salads a lot! When I say a lot I mean like twice a day. Recently, I have just been so sick of the normal salad that I have been eating an amazing Roasted Veggie & Goat cheese salad. Not only is this super easy to create but it is so yummy!

The one thing that I love about this salad is that you really can use any dressing you would like but I found that the best option is the Balsamic Vinaigrette, which tastes totally amazing. To create this simple and delish salad you will need just a few things including, sweet peppers, Zucchini, and goat cheese. I just use iceberg lettuce but you can use whatever you like.

I cut everything up and first cook the peppers for about 20 minutes on medium-high heat. Depending upon how many salads you want to make I use about 5 slices of each sweet pepper and cut zucchini. I roast the zucchini last because this does not take as much time to get tender as the sweet peppers, only about ten minutes and they are done.

Once your veggies are roasted I let mine cool before I put them on the salad but that is totally up to you. I put the veggies on top of the goat cheese which tends to get softer with the warmer veggies. Making this a melt in your mouth salad of goodness.
