Parties are going to look very different this year but that doesn’t mean easy meals still won’t be appreciated. We may not be gathering in large groups to celebrate the holidays or for The Big Game but we can still have a zoom party and serve up some good food within the family unit. What’s good about this soup is that it’s easy, it’s hearty and it doesn’t require a lot of work. What more can you ask after a busy day? Plus, you don’t have to save this for “game day” – it would work well for any meal where you just want something filling but a little bit different. I served it with some homemade Italian bread and a salad and it really was a tasty meal. I am revisiting this post from several years ago but the recipe is certainly one that would work in these crazy times.

1 Party Size Stouffer’s Lasagna with Meat and Sauce
4 cups beef stock or soup (low salt)
2 cups tomato juice
Parmesan cheese for grating

  • Let the lasagna thaw and cut it into small squares.

  • Set your slow cooker to high and add the beef stock or soup and tomato juice.
  • Add in the pieces of lasagna and stir well. Let cook until hot.
  • Serve with a grating of Parmesan cheese and some Italian bread.

How Was the Slow Cooker Lasagna Soup?

Could that be ANY easier? It is also a very delicious and a great way to use up leftover lasagna. With the soup in the slow cooker your guests can serve themselves when they are hungry and you don’t have to fuss. I don’t know about you but I love soup and bread for dinner. Especially a hearty soup like this one; it has noodles, cheese and meat and it sure left the two of us satisfied.

I just added a simple green salad to go with the bread and soup and it was a wonderful and filling winter’s dinner. A simple dessert was all that was needed to round out this meal. A chocolate banana bundt cake would be delicious or some ice cream sandwiches. I’ll share the recipe for those later this week.
