Toast the End of Summer with These Cocktails

Just as soon as I get in the swing of summer it is time to say goodbye. Don’t get me wrong I adore the fall!!! In fact, totally can’t wait but today I wanted to share with you some amazing cocktails to toast the end of summer.

Below are a few of our favorites from beverage industry experts Cassandra Rosen, wine educator with Tussock Jumper Wines, Melissa Tavss, founder of the cult favorite cocktail-inspired ice cream brand Tipsy Scoop and Ute Londrigan of Heimat New York

End Of Summer Cocktails

Rummy Days *to celebrate National Rum Day (9/20)*By Melissa Tavss, Tipsy Scoop Brooklyn

3 oz Tussock Jumper Moscato
2 oz white rum
3 oz pineapple juice
2 scoops Tipsy Scoop vegan pina colada ice cream
Place the scoops in a tall glass, and top with ingredients. Stir one minute, serve. 


Not Your Momma’s Peach Tea Cassandra Rosen, Wine EducatorTussock Jumper Wines


1.5 oz Tussock Jumper Sauvignon Blanc
1 oz peach tea, brewed
1 oz citrus-infused gin
.5 oz fresh lime juice
.5 oz rock sugar simple syrup 
Crushed or cubed ice
Garnish: lime wheel
Brew 1 cup of tea for 1.5 minutes, allow to cool.  Set aside 1 oz of the tea to make one cocktail.  Combine tea, lime juice, and simple syrup in a shaker, then add the remaining ingredients and shake with ice.
Strain into a glass over ice.  Garnish with a lime wheel, and serve.

Rosemary Citrus Spritz Cassandra Rosen, Wine EducatorTussock Jumper Wines


3 oz Tussock Jumper Sauvignon Blanc
1 oz orange vodka
3 fresh orange segments, skins removed
1 tbsp agave nectar
Juice of one lemon wedge
2 rosemary sprigs
1.5 oz grapefruit  soda water
In the bottom of a mixing glass, muddle one rosemary sprig with the lemon and agave nectar. Add Tussock Jumper Sauvignon Blanc and vodka, shake well with ice. Strain over ice into a wine goblet, and top with soda water. Garnish with a rosemary sprig.


Tussock Jumper Summer SangriaCassandra Rosen, Wine EducatorTussock Jumper Wines


1 bottle Tussock Jumper Sweet Cat Red Blend, chilled
½ cup brandy
2 tbs simple syrup
1 large orange, sliced into wedges
1 cup sliced or chopped seasonal fruit (apples, kiwi, strawberries, peaches, grapes)
1 lime or lemon, sliced into wheelsIce
Slice the citrus and fruits, squeezing a few slices of limes over the apples to prevent browning. Squeeze half of the orange into a pitcher, chop the remaining wedges, and add them to the pitcher. Add the rest of the fruit. Add the brandy, simple syrup, and wine, stir to combine. 
Serve the sangria immediately, or let it chill for 2 to 8 hours for more flavor. Serve in glasses over ice.


Little Havana By Ute Londrigan, Heimat New York 


1.5oz white rum
1oz Heimat New York Rhubarb Liqueur *Available at HeimatNY.com and NewYorkCraftSpirits.com
0.5 oz rosemary syrup (see recipe below)
0.25 oz lemon juice
Combine all ingredients in a shaker filled with ice and shake until cold. Strain into a chilled cocktail glass. Garnish with lemon and rosemary. 
Rosemary Simple Syrup1 cup water1cup sugar4 fresh rosemary sprigs
Combine water and sugar in a small saucepan. Heat over medium-high heat and bring to a boil, whisking occasionally until sugar dissolves. Let simmer for a few minutes until the liquid is completely clear. Remove from heat. Add fresh rosemary to the saucepan and let the simple syrup cool for 30 minutes to an hour, until thick and syrupy. 


Cherry Bomb Float By Melissa Tavss, Tipsy Scoop Brooklyn



2 scoops Vanilla Bean Bourbon Ice Cream
1 bottle cherry lambic beer
Garnish: cherry gummies and maraschino cherries
Pour half of the beer into a snifter style glass. Fill with ice cream, and slowly pour the rest of the beer in, being careful not to allow too much foam to escape. Top with gummy cherries and maraschino cherries. 


Watermelon Sugar’ Adult SlushieCassandra Rosen, Wine EducatorTussock Jumper Wines



1 cup watermelon, chopped
4 oz. Tussock Jumper Moscato Rosé
½ oz watermelon liqueur
½ cup ice
1 tbsp agave nectar
juice of half a lime
½ cup seltzer
Sugar rim for glass
Place watermelon, watermelon liqueur, and lime juice in the blender with ice, blend till smooth. Strain out any large chunks, and pour back into the blender with wine and seltzer. Pulse to blend, serve.  


Berry Rosé SparklerCassandra Rosen, Wine EducatorTussock Jumper Wines



4 ounce Tussock Jumper Moscato Rosé
 6-8 blueberries
1/2 ounces lemon juice
Put the blueberries in the bottom of a shaker, add the lemon juice, and muddle. Add the Tussock Jumper Moscato Rosé, then strain over rocks into a glass, and serve.


Berry Rosé SparklerCassandra Rosen, Wine EducatorTussock Jumper Wines



4 ounce Tussock Jumper Moscato Rosé
 6-8 blueberries
1/2 ounces lemon juice
Put the blueberries in the bottom of a shaker, add the lemon juice, and muddle. Add the Tussock Jumper Moscato Rosé, then strain over rocks into a glass, and serve.

All of these are a great way to say goodbye to summer. Personally, my fav is the Cherry Bomb Float!!! SOOOOOOOOO good. I do hope that you enjoy.
