Dry Ingredients:
 1 ¾ cups all-purpose flour
 1 ½ tsp baking powder
 ½ tsp baking soda
 ¼ tsp pink salt or sea salt
 1 tsp cinnamon (optional for added flavor)
Wet Ingredients:
 ? cup neutral oil (like coconut, avocado, or grapeseed)
 ? cup organic cane sugar or coconut sugar
 ? cup almond milk or any plant milk of choice
 1 tsp vanilla extract
 4 ripe bananas, mashed (about 1 ½ – 1 ¾ cups)
Add-ins (optional):
 ½ cup chopped walnuts or pecans
 ½ cup vegan chocolate chips or dried fruit

Preheat your oven to 350°F (175°C). Lightly grease or line a 9×5 inch loaf pan with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

In a separate bowl, combine the oil, sugar, almond milk, and vanilla extract. Add the mashed bananas and mix until well combined.

Pour the wet mixture into the dry ingredients. Stir gently until just combined, ensuring not to overmix. If you’re using any add-ins like nuts or chocolate chips, fold them into the batter.

Transfer the batter to the prepared loaf pan, spreading it out evenly. Place in the oven and bake for 55 – 65 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.

Once baked, remove the bread from the oven and let it cool in the pan for about 15 minutes. Afterward, transfer it to a wire rack to cool completely.
