Roasted Garlic Hummus

Ingredients

  • 3 heads garlic
  • 3 tablespoons olive oil divided
  • 2 15 ounce cans chickpeas drained and rinsed
  • ½ cup tahini paste
  • 2 tablespoons fresh lemon juice juice of one lemon
  • 3 ice cubes
  • Optional: Olive oil, parsley, chopped roasted garlic and red pepper flakes for garnish

Instructions

  • Preheat the oven to 400F. Place three pieces of aluminum foil (large enough to cover a head of garlic) on a baking pan.
  • Cut the tops off (about ¼”) of each garlic head and remove any loose skin. Place each head of garlic on a piece of aluminum foil and drizzle generously with olive oil (about two tablespoons total).
  • Wrap the garlic heads tightly in the aluminum foil and place the pan in the oven. Roast the garlic for approximately 45 minutes or until the garlic cloves are soft. Remove the garlic heads from the oven and unwrap them to cool once they’re done.
  • Add the roasted garlic, chickpeas, tahini paste, lemon juice, and ice cubes to a blender. Blend the ingredients together until smooth and creamy.
    Tip: If your ingredients aren’t coming together smoothly, add a small amount of ice-cold water.
  • Serve the hummus in a bowl or container. Top with olive oil and any additional desired garnishes.
