Servings 32 sausage balls

Ingredients

  • 1 pound ground breakfast sausage
  • 2 cups bisquick mix
  • 6 ounces (or 1.5 cups) pepper jack cheese freshly shredded
  • 4 tablespoons unsalted butter
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon minced garlic

Instructions

  • Preheat your oven to 350? and line one or two sheet pans with parchment paper. You can use one pan and cook multiple batches or use two for quick baking.
  • Measure out and add all the ingredients to a large mixing bowl.
Tip: The Bisquick mix should be measured by the spoon and level method. Spoon the mix into a measuring cup and level it. Don’t pack down the mixture into your measuring cup. Too much Bisquick will result in dry sausage balls that don’t hold together very well.
  • Get messy! Use your hands to combine all of the ingredients. Make sure to mix the sausage thoroughly with the dry ingredients. If you feel you can’t get everything to come together, you can add a tiny bit more butter.
Tip: you could also use a stand mixer with the paddle attachment. I find it’s easier and more efficient to just use my hands though.
  • Turn the sausage mixture into 1.5” balls and place them on the pan lined with parchment paper. They should be placed about an inch apart. The balls should be tightly packed and uniform in size.
Tip: I like to use a cookie scoop for this step. Depending on the scoop size, you won’t want to fill it all the way when scooping.
  • Bake the sausage balls for 14-18 minutes until thoroughly cooked through and golden brown on the outside.
Tip: The internal temperature should be at least 160? for ground pork sausage.
