Independence Day is upon us and soon we will be searching for items to take to parties and potlucks. Today, I have the PERFECT dessert idea for you, a 4th of July Poke Cake.

A 4th of July poke cake with all the colors of the American flag as well as all the flavors that you would expect from this holiday! Poke cakes are usually baked in a square pan, but they can be baked in round pans as well.

A poke cake is a type of cake that is made by poking holes in the cake and then pouring a liquid into them. Although my recipe has homemade icing, store-bought icing would be just fine.

4th Of July Poke Cake ~ The Perfect Dessert Idea For Potlucks

This 4th of July, show your love for America in a fun way. Bring a 4th of July poke cake to the next potluck and wow your friends with your patriotism.

Ingredients

  • 1 box - 15.25 oz pilsbury white cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 package (3oz) package strawberry gelatin
  • 1 package (3oz) package berry blue gelatin
  • 2 cups boiling water for gelatin
  • 1- 8oz package cream cheese
  • 3/4 cup powdered sugar
  • 8 ounces cool whip; thawed
  • 6 strawberries; sliced
  • 2 cups blueberries

Instructions

    Preheat the oven to 350 degrees F.

    Mix cake mix per the directions on the box. Pour into grease 13x9 baking dish. Bake for 34 to 38 minutes until a toothpick inserted in the center comes out clean. Cool cake completely.

    Take a straw and poke holes in four to five rows along the cake lengthwise.

    In one bowl mix together one cup of boiling water and red gelatin. In a second bowl mix together one cup of boiling water and blue gelatin. Stir well.

    Spoon red over one row of holes then spoon blue over another row of holes. Rotate until each full row is filled.

    Mix together powdered sugar, cream cheese, and cool whip. Ice the top of the cake.

    Slice strawberries and make lines with strawberries then blueberries and repeat until finished. Cool in the fridge until ready to serve.
