When my husband and I bought our little piece of paradise in Montana we weren’t just settling down after traveling the country in a fifthwheel trailer for three years – we were changing everything. It was the start of a new life living healthy. We bought a piece of land large enough to plant a big garden and support a small herd of dairy goats. Then came the chickens. We were going to do all we could to adopt a lifestyle of healthy eating while still living well. I can let you know that after being here for seven years it does involve a bit of work but it is very much worth the effort.

The garden produces all of our vegetables, the goats our milk and the chickens provide meat and eggs. We generally end up with a deer every year and barter provides additional meat and fish for the freezer. But there are times that I need something quick yet healthy to help me pull together a meal. The hubby is fire chief in our town and he often has meetings at night. He runs in and runs back out again 20 minutes later. He does take a light lunch to work.

I like to feed him fresh, flavorful meals. He is trying to lose some weight right now so on two nights a week I have calorie restrictions due to the program he has chosen to follow. On the other nights I still keep things healthy yet tasty. To that end having Tyson Grilled & Ready in the refrigerator or freezer makes sense. One night – a diet night – I made him kale wraps that he really enjoyed.

I used the Tyson Grilled & Ready Seasoned Steak Strips. Now, I must admit that the look of the steak was a bit disappointing but the taste made up for the appearance. It was tender and well seasoned.

Kale Wraps with Apple, Onions, Peppers and Beef

PRINT THIS RECIPE

Serves 1 – a 350 calorie meal

3 oz Tyson Grilled & Ready Seasoned Steak Strips
7 oz sliced onions and peppers
3 large kale leaves
1 small apple, cored and julienned, a few pieces reserved for garnish
salt and pepper to taste
3 TBS blueberry balsamic vinegar

Add the onions to a non-stick saute pan with a sprinkling of salt and pepper. Add 1 TBS of the blueberry balsamic. (If you don’t have the flavored vinegar a regular balsamic will work just as well.) If it seems dry add a bit of water. After the onions have gotten quite soft and picked up a bit of color add in the peppers. Cook until they are warmed through but still a bit crisp. Trim the kale leaves and chop the cores and add to the pan. Add the Tyson Grilled & Ready Seasoned Steak Strips and heat until warmed through. Toss in the apple pieces and mix.

Divide the mixture between the three kale leaves roll as tightly as you can. Don’t worry if some falls out of the ends – you can stuff it back in. Cut the wraps in half and arrange on a plate.

Take the remaining apple slices and use in a decorative way – we do eat with our eyes first! Drizzle with the remaining 2 TBS balsamic vinegar.

One of my favorite ways to make food taste delicious without adding lots of fat and wasted calories is to use flavored vinegars. They add a remarkable flavor depth to meals and are not as sour or harsh as you might expect. Try some – you’ll be happy you did. Hubby loved this meal – he said it filled him up and left him satisfied. He loved the combination of flavors.

I also wanted to try the Grilled & Ready chicken so I pulled some crepes out of the freezer. I love to have options in my freezer for fun meals and crepes definitely fall into that category. They are easy to make and they freeze beautifully.

The chicken and some seasonal clementines helped me make a very tasty meal. It was easy to pull together and looks much fancier than it really is. I served it with a simple salad.

Chicken and Clementine Crepes

PRINT THIS RECIPE

Serves 2

4 crepes
1 small package (6 oz ) Tyson Grilled & Ready Chicken Breast Strips
2 Clementines, zest one, peel both and cut the segments in half
4 Clementines, juiced
1/2 cup Pomegranate juice
2 TBS honey
Fresh ground pepper to taste
1/2 tsp tarragon
salt
1/2 cup toasted almonds, chopped

Mix the Tyson Grilled & Ready Chicken Breast Strips with the clementine zest. Set aside. Combine the clementine and pomegranate juices with the honey, a pinch of salt and as much pepper as you would like.

Place a saucepan over medium heat and cook the juice mixture until it reduces in half. Add the tarragon and cook for one more minute. Remove from heat.

Warm the chicken over low heat. Add the clementine segments and about 1/4 of the juice mix. Stir in 1/2 of the chopped almonds.

Divide the chicken mixture between the four crepes and roll.

To serve place one crepe on the plate. Cut the second crepe in half and arrange. Drizzle the sauce over top and sprinkle with the chopped almonds.

This was DELICIOUS! Bold, bright flavors with the tender, tasty Tyson Grilled & Ready Chicken Breast Strips. It was delightfully accented by the tart pomegranate and citrus flavors. The pepper gave it a bite of heat and the almonds added a nice crunch.

The demos will occur January 16 – 19 so check with your Walmart to see if it is participating – my Montana store is not.
