- 6 ears sweet corn (about 6 ½ cups kernels)

Let’s Start Cooking Belizean Dukunu
Step 01: We will do a very small recipe, using just six sweet corn. First we have to cut off both ends of the corn and when we cut the top portion make sure you cut it too where you can see the corn that way when we peel the husk off it will peel up more evenly.
Step 02: Now we will peel the husk off. Usually we will throw away the first two or three pieces just because those always look dirty and then we are going to keep the rinse because we will wrap our token.
Step 03: We will cut the kernels off the cob and then measure it out so we can see every time we do this we get a different amount as we know no coin is ever the same you just never know what we’ll get so always measure it out that way you can adjust the recipe accordingly.
Step 04: we measured out six and a half cups. blend that for one to two minutes depending on the blender you’re using. we didn’t put anything in a blender with the corn, it was just corn that we blended.
Step 05: Now we will give it a stir because we’re using the sweet corn and we have to change the recipe and add the cornmeal.
Step 06: At this stage just take a spoon of the filling and put it on one on the top side and then just fold that over and the bottom portion you just want to fold that up because the Husker really smiles. we’re going to wrap it in a piece of foil just so it could stay together.
Step 07: Bring a pot to a boil and then lower the heat to medium and let that cook for 40 minutes after we’re finished cooking. We will take them out and let them cool off a little bit before we unwrap them from the foil and then we just leave them there in the husk until we’re ready to eat them.
