Today I wanted to share one of the most fantastic recipe creations if I might say so myself and that is for the Chocolate Covered Pretzel Cookies. One thing that my husband loves is snacking on pretzels and chocolate so I thought this combination would be perfect.

The one good thing about this camper is that I have a larger oven which allows me to start doing more recipe creations. These are simple to make at home or even while your rv’in with family and friends this summer. I can’t tell you how many compliments I have gotten on these cookies, and they are now a new family tradition when we are on the road.

Chocolate Covered Pretzel Cookies

Like I said, this recipe is relatively straight forward and easy to create. You could even make these with your kids, which is always fun to have little hands in the kitchen. I did not use a cookie mix for this recipe, but you are more than welcome to do so, I just find homemade cookies to be a lot better than what you might find in a pouch or box. First, you will, of course, preheat your oven to 350 degrees and prepare your baking sheet with parchment paper. Beat together butter, brown sugar, and white sugar with a hand mixer until soft and fluffy. Add vanilla extract and eggs. Beat to combine.

Mix in flour, baking soda, and salt.

Add chocolate chips and caramel bits. Stir until just mixed.

Scoop spoonfuls of dough onto a lined baking sheet. Bake for 10 to 15 minutes, until edges of cookies, are a light golden brown.

Remove cookies from oven and immediately press mini pretzels into the tops of each cookie.

Allow to cook for a few minutes on the baking sheet, then remove cookies to a wire cooling rack to cool completely. When the chocolate covered pretzel cookies are cool, drizzle melted chocolate chips over the top of each cookie. Allow chocolate to cool and set before serving.

Ingredients

  • ¾ cup butter softened
  • 1 cup brown sugar, packed
  • ½ cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups plus 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ dark chocolate chips
  • 1 cup caramel baking bits
  • 1 cup mini pretzels
  • ½ cup chocolate chips, melted

Instructions

  1. Preheat oven to 350 degrees and prepare a baking sheet by lining it with parchment paper.
