Ingredients need for Costco Chicken Noodle Soup Recipe

  • 1 tablespoon olive oil
  • 3 medium boneless skinless chicken breasts
  • 2 tablespoons salted butter
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 medium white onion diced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon minced garlic
  • 8 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper
  • 12 ounces egg noodles 
  • 3 tablespoons freshly chopped parsley

How to Prepare Costco Chicken Noodle Soup Recipe

Step 1: Chop the vegetables 

In a chopping board using a sharp knife chop all the vegetables and onions into small slices and and let all of them aside.

Step 2: Heat the quart pot

In a large 6 quart pot, heat olive oil over medium-high heat. Meanwhile season  the chicken breasts with salt and pepper.

Step 3: Sear the chicken

Sear the chicken breasts in pot for 3 to 4 minutes per side, until seared and browned. Remove from the pot and set aside on a plate.

Step 4: Add the chopped vegetables 

Without wiping out the pan, add in butter onion, carrots, and celery and sauté until vegetables just start to become tender, about 5 to 7 minutes. Add ginger and garlic and sauté for 2 minutes more.

Step 5: Pour in the broth

Pour in broth and season with thyme, oregano, salt, pepper and bring to a boil. Let simmer for 10 minutes. Return the chicken breasts to the cooking pot immediately after adding the broth.

Step 6: Add in the noodles 

Add in egg noodles and let simmer until noodles are cooked through according to the package directions. Frozen will take longer to cook than dried egg noodles.

Step 7: Shred the cooked chicken pieces 

Pull out those chicken breasts at the end of the cooking time, chop them up with a knife or shred them with a fork, and return them to the pot. Taste and add more salt and pepper to taste and top with freshly chopped parsley.

Step 8: Ready to Serve

Now after the cooking is done, grab a ladle and pour the cooked chicken noodle soup in a bowl and it’s ready to serve and eat and enjoy this yummy meal.

Note: this is optional but I like to add in maybe 2 or 3 tablespoons of chopped parsley just to add a little bit of color.
