Vegan Tofu Tortilla Wraps

 1 block of firm tofu (about 14 oz.), drained and pressed
 4 large whole wheat tortilla wraps
 2 tbsp olive oil
 1 tsp smoked paprika
 1 tsp ground cumin
 Salt and pepper to taste
 1 cup fresh lettuce, shredded
 1 red bell pepper, thinly sliced
 1 avocado, sliced
 ½ cup red onion, thinly sliced
 ½ cup cherry tomatoes, halved
 ¼ cup vegan mayo or tahini (for drizzling)
 Optional: Fresh cilantro and lime wedges for garnish

After pressing the tofu to remove excess water, cut it into thin strips. In a mixing bowl, toss the tofu strips with smoked paprika, cumin, salt, and pepper until well-coated.

In a skillet, heat the olive oil over medium heat. Once hot, add the seasoned tofu strips. Cook until they are golden brown and crispy on each side, about 4-5 minutes per side.

Lay out a tortilla wrap on a flat surface. Start by placing a generous amount of lettuce in the center. Add slices of bell pepper, avocado, red onion, and cherry tomatoes. Place a few tofu strips on top.

Drizzle with vegan mayo or tahini. If desired, garnish with fresh cilantro and a squeeze of lime.

Fold in the sides of the tortilla and roll it up tightly. Cut in half and serve immediately. Repeat with the remaining tortillas.
