I don’t know about you but when I think of summer I think of fun! Lots of time outside enjoying the sun, grilling dinner and eating on the deck. Desserts should be easy, fun and if you ask me full of ice cream. If asked to come up with a sweet way to celebrate summer I can’t think of anything better than a Rice Krispies Treat Ice Cream Sandwich.

A Rice Krispies Treat Ice Cream Sandwich?
One of my favorite snacks ever is the Rice Krispies Treat. In some ways it is perfection. But I got to thinking – can perfection be improved upon? Upon deliberation I decided that yes, it can be with a simple addition of another bit of perfection – vanilla ice cream. Then I wondered how I had never considered this before. The idea is so simple yet so brilliant – if I do say so myself.
There are two ways you can go with this; basic and fancy. I’ll show you both ways. Either one is DE-LICIOUS and they are both easy. The fancy way just gilds the treat with a layer of chocolate.
Yes….chocolate, Rice Krispies Treats and ice cream.

But first let me tell you about the hot deal at Target so you can save money before you go make nirvana on a plate.
Save at Target Before You Treat Yourself
I love going in to the Target in Missoula because the associates are so happy. On this particular trip I had a diverse shopping list and I found everything I needed in short order. The Rice Krispies were in the cereal aisle and I bought some Chips Deluxe cookies to add a bit of extra-extra to the ice cream sandwiches. You’ll see how in the recipe below.

Now that you’ve done your shopping are you ready to make some fun summer treats?
Rice Krispies Treat Ice Cream Sandwich
6 cups Rice Krispies
1 pkg (12 oz) Jet Puffed marshmallows
3 TBS butter
cooking spray
1 1/2 quarts ice cream (store bought or homemade) slightly softened
6 Chips Deluxe Cookies, crushed
Optional
12 oz chocolate roughly chopped
2 TBS coconut oil or butter
Line a brownie pan 10 x 6 x 2″ with parchment paper
Add the softened ice cream and smooth.
Refreeze until hardened
Line a half sheet pan or large cookie sheet with parchment paper. Lightly coat with cooking spray
Add the butter to large pot over medium heat.
When melted add the marshmallows
Stir until melted.
Remove from heat and add the Rice Krispies. Stir until well mixed.
Remove the mixture to the prepared pan. Let cool about 5 minutes.
Coat hands with cooking spray.
Press the Rice Krispies treat mixture until it’s about 1/4 – 1/2″ thick
Smooth with a small roller if you have one. Otherwise just make the top as smooth as possible.
Optional Chocolate Layer:
Melt the chocolate and coconut oil in a double boiler until smooth. Cool slightly.
Pour over the Rice Krispies treats and spread with an offset spatula so that a thin layer covers the top.
Put the Chips Deluxe cookies in a bag and whack them with a rolling pin to crush them.
(I will admit, I ate the M&Ms. One must fortify while creating.)
Put the crumbs in a bowl
Trim the edges of the Rice Krispies Treats so that they are even
Decide the size you would like your ice cream sandwiches to be and cut the Rice Krispies treats into blocks of that size.
Take the ice cream from the freezer and remove it from the brownie pan.
Put one of the Rice Krispies treats that have already been cut on top of the ice cream for a guide and cut blocks of ice cream the same size.
Build the ice cream sandwiches.
Dredge the sandwiches in the Chips Deluxe cookie crumbs.
Wrap in parchment and refreeze if you are not going to eat immediately

How Were They?
Seriously people, do you have to ask?
I mean we are talking Rice Krispies Treats, chocolate, ice cream and cookies. How could they not be good?! They were more than good actually – they were even better than I thought they would be. All of those singularly perfect flavors came together to create a new taste treat that I will be making again. And again and again.
Yum is just the beginning. I might have eaten two in a row but that could also be a rumor started by the Farm cats. The hubby is also a fan and he’s a man who tends to like his ice cream in a bowl. I may have converted him – time will tell. I’ll just have to make them again.
And again and again. ;)
