Simple Caramel Sauce

In making the recipe for Apple Sheet Cake with Caramel Sauce I used homemade caramel and mentioned I would share the recipe and that is what I am doing right now. It is very easy to make and you don’t need fancy ingredients; just sugar, butter and heavy cream. A pinch of salt really brings out the flavor. I found the recipe on Simply Recipes through a google search. What I failed to do is take photos of the process as it happened pretty quickly. I only have the one photo of the finished simple caramel sauce as I made a video of the process instead of taking stills.

Simple Caramel Sauce

1 cup of sugar
6 TBSP of butter
1/2 cup of heavy whipping cream
pinch of salt

  • Have everything ready to go ’cause once it’s time to add the cream you don’t want to be burning your sugar looking for it.
  • Also remember boiling sugar is H.O.T. and I mean HOT. Don’t mess around with it! The burns HURT and hurt for days. Don’t ask how I know this, you don’t want to know.
  • Heat the sugar in a heavy bottomed 2 to 3 quart pan (you need a good pot for this, don’t mess around. You need even, steady, and hot. If you use a crappy pan some of the sugar will burn and your caramel sauce will taste like burned sugar which is one of the worst tastes and smells for that matter, in the world.)
  • As it starts to melt, keep stirring. Once it boils, STOP stirring.
  • As soon as the sugar melts and it is a lovely amber color  toss in the butter and stir/whisk until the butter is melted. It will foam up when you add the butter. Don’t worry!
  • Once the butter has melted pull the pan from the heat, count to three, then slowly add the cream to the pan and whisk to incorporate. It will foam up again!
  • The foaming up is why you need the deep pan.
  • Whisk until the sauce is smooth and cool slightly in the pan then pour into a glass mason jar or the like and let sit to room temperature. 

It will store for up to two weeks – as if it would last that long. 
Makes just over a cup.

It is truly delicious. The little bit of salt is a perfect addition. Just be careful and follow the directions and you will have your own delicious, decadent caramel sauce. There are so many things to be done with it like apple caramel cheesecake for one.
