I had to bake early for the firemen again; if you will recall the hubby wasn’t able to attend training the last time around due a conflicting meeting so I had to send the treat in the day before (I made a Coconut Chocolate Marble Cake) and the same thing was happening for last week’s meeting. I would say that he is enjoying his retirement and the bit of freedom it has afforded him to pursue other interests. He still goes out on fire calls – like the one last night to the fire RIGHT NEXT DOOR! Our neighbor had been burning some dead wood and it took off a bit and caught a big tree on fire.

That was just a little bit exciting.

It all got put out in good order and the poor tree was all black today. The firemen really do earn their treats! These cookies went in last Tuesday and from what I understand they were well enjoyed. It’s a simple recipe but it makes a really delicious cookie. It’s one of the few recipes from the Martha Stewart’s Cookies cookbook that works well.

Classic Chocolate Cookies

2 cups plus 2 TBS all purpose flour
3/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups unsalted butter at room temperature
2 cups granulated sugar
2 large eggs
2 tsp pure vanilla extract
sanding/pearl sugar for rolling

Whisk the flour, cocoa, baking soda and salt together in a bowl.
In the bowl of a stand mixer with the paddle attached cream together the butter and sugar – about three minutes.
Add the eggs, one at a time mixing well after each one.
Add the vanilla and mix.
Add the flour mixture and mix on low until just combined.
Refrigerate the dough for about an hour.
Preheat the oven to 350°
Put the sanding/pearl sugar(s) in a bowl(s)
Roll the dough into small balls of about 1 tsp – I used a small scoop – and roll into the sugar of your choice.
Place on a parchment or silicone lined cookie sheet
Bake in the preheated oven for about 15 minutes

This is a truly delightful chocolate cookie – not too sweet and rich in chocolate flavor. It holds well and it’s and excellent cookie for ice cream sandwiches.

The firemen enjoyed them. I heard they were pretty much gone by the next day. That’s what I like to hear.
