I was send a sample box containing wild Alaska Salmon and cod from Sitka Salmon Shares. All opinions are my own. Enjoy the easy salmon recipe below.

Easy Salmon Recipe – Salmon in Butter Thyme Sauce

Serves 2

  • 1 10 oz salmon filet
  • 1/2 cup orange juice
  • 1/4 cup white wine
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 2 tsp unsalted butter
  • 1 TBS balsamic vinegar
  • 2 cups cooked brown rice
  • 2 TBS pomegranate seeds – optional
  • Preheat oven to 350

    • Add orange juice and white wine to a flat dish. Stir in thyme. Set salmon filet, skin side up and let marinate for 10 minutes. Turn and marinate for another 10 minutes.
    • Tear a large piece of parchment paper. Spray with cooking spray.
    • Remove salmon from marinade and sprinkle with salt on each side. Fold the parchment in half and open again. Place the salmon at center on the bottom half of the parchment.
    • Cut the butter into three or four slices and place on top of the salmon.
    • Fold the top of the parchmen over and start to seal by folding over and creasing, folding over and creasing. (see video below)

  • Place on a baking sheet
  • Leave a small opening on the one side and pour in half of the marinade. Seal completely.
  • Bake in the preheated oven for 15 – 20 minutes depending on how thick your filet is. About an inch takes 15 minutes.
  • While the fish is cooking take the remaining marinade and pour into a small saucepan. Add the balsamic vinegar. Heat over medium high heat until reduced by half. Taste and add salt if needed.

  • When the fish is cooked carefully open the packet – it will release steam so beware.
  • Cut the salmon in half and serve on the cooked brown rice. Carefully divide the liquid from the parchment package between the two plates – pouring it over the salmon and rice. Drizzle with with the reduced sauce.

  • Sprinkle with pomegranate seeds if using.

How Was the Easy Salmon Recipe?

What can I say – it was easy! Cooking salmon or any fish in parchment just about guarantees a perfectly moist piece of fish. It gently steams the fish in whatever liquid you put in the packet.  I have used this method many a time and have never been disappointed – many times to cook salmon, Chilean sea bass and even lobster!
