I love onion soup – OK, to be honest I love the cheesy crouton on top of the onion soup. Isn’t that the whole point of the dish? That’s why I was so happy to be offered some free coupons for Jarlsberg® Cheese. I knew it would be the perfect topping for some of my home canned onion soup. But then I thought, how could I make the soup even better? Meatballs! I could make cheesy little meatballs to go in the soup.

And so I did. And it was good.

Onion Soup with Cheesy Meatballs

Serves 2 – 3

1 quart onion soup
1 pound ground meat
1 egg
2 TBS ketchup
11/4 cup panko bread crumbs
1 tsp salt
1/2 cup shredded Jarlsberg cheese
1 TBS canola oil
3 – 6 pieces day old French bread. If you only have fresh bread toast it a little before using
6 – 8 slices Jarlsberg cheese

Mix together in a bowl the ground meat, egg, ketchup, 1/4 panko, salt and 1/2 cup Jarlsberg cheese.
Form small meatballs using about 1 TBS of the meat mixture.

Roll the meatballs in the remaining panko.
Heat a large, heavy bottomed fry pan over medium high heat until hot. Add the canola oil.

When the oil is hot add the meatballs and fry until they are browned, turn over and fry until browned.
Removed the meatballs to a plate or bowl and set aside.
Preheat the broiler
Heat the onion soup in a pot until just simmering.

Place 2 – 3 onion soup bowls on a baking sheet
Add a few meatballs to onion soup bowls.
Top with the hot onion soup

Top with the French bread to cover.

Cover with the sliced Jarlsberg cheese
Put the sheet with the bowls under the broiler for a minute or two until the cheese is melted and slightly browned.

The meatballs were a fun surprise in this traditional dish. They added a really nice flavor to the soup. There were quite a few leftover and I used them the next night to make meatball Parmesan subs.

Here is some info on the different Jarlsberg cheeses available:
