I mentioned the other day when I posted the recipe for the Plum Blackberry Buckle that I had picked lots of beautiful fruit at my neighbor’s orchard. Most of the plums went into that buckle, and the bulk of the apples and pears went into a batch of pear/apple/plum sauce that I canned. I did keep some pears out for me to enjoy – they are my favorite winter fruit – and some went into a batch of muffins I made for the hubby. He was heading off to fight the good fight in support of Climate Change and he wanted snacks for the other people joining the battle. I made what have become my famous Espresso Muffins and I played a bit to create a pear recipe that would work. I give you Pear Chocolate Chip Muffins.

Pear Recipe – Pear Chocolate Chip Muffins

Makes 20 – 22

  • 2 cups all purpose flour
  • 1 cup rolled oats
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup chocolate chips
  • 1 1/2 cups chopped pear
  • 1 cup sour cream
  • 1 cup canola oil
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1 large egg
  • sugar in the raw for sprinkling on top of muffins if desired
  • Preheat oven to 400
  • Line muffin cups with paper liners and spray with cooking spray.
  • In a large bowl mix together the flour, oats, baking powder, baking soda, cinnamon and salt. Add the chocolate chips and toss to coat.
  • Stir in the chopped pear.
  • In a medium bowl whisk together the sour cream, oil, maple syrup, egg and brown sugar.

  • Pour the liquid ingredients into the dry and fold until just combined. Do not over mix.

  • Use a large scoop to drop the batter into the muffin cups. Sprinkle with sugar in the raw if desired.
  • Bake in the preheated oven for 20 – 22 minutes until golden brown.
  • Cool on a wire rack.

How Was the Pear Recipe?

These muffins were very good. Not too sweet, with delightful chunks of pear. The chocolate is not overwhelming and well, pairs perfectly with the pear. I kept one back for myself and the hubby reported that everyone on the trip enjoyed them.
