Quick & Delicious Breakfast Casserole: With Endless Customizable Options
Making healthy breakfast ahead of time means my husband can eat before he quickly heads out the door in the morning, without having to stop for a snack on the way to work!
We save money and eat healthier, and that’s what I’m all about!
This casserole is filling, quick, packed full of protein, and super easy to customize.

I like to make a pan at the beginning of the week and then heat some up each morning fast since its already prepared!

How I make this recipe is just a TAD spicy, (it has a whole tsp of red pepper flakes,) but you can totally reduce or omit the spices to make it more mild for you. We just like a little kick to wake up in the morning ;)
If you do prefer less spicy dishes, you can use onion, garlic, dill, a dash of cumin, or whatever other herbs or spices you think would make it delicious instead.
(We just happened to be out of onion and garlic powders when I made this recipe, but they would definitely be good options.)
A side note about my spices…
I usually buy spices in bulk and don’t want to keep them in the plastic bags they come in, so I got these glass jars which I have been LOVING!

Keeping my spices in these jars keeps them super fresh because of the rubber gasket on the lid, and the labels on top make them easy to find.
I also love how cute they are, all the colors and textures of the spices are so pretty in the pantry!
The customizations are endless on this one. Use this recipe as a base and add or exchange other vegetables to suit your tastes or fridge-contents!
Some great ideas to customize it are:
- Change the cheese, try pepper-jack or Swiss!
- Try turkey sausage instead of pork sausage
- Throw some tomatoes on top
- Add slivered red onion
- Add Chopped green onions or scallions
- Try Bacon pieces instead of sausage
- Replace the baked potato for baked Sweet potato
- Add Roasted Asparagus tips (for some reason that just sounds so good to me!)
You can really make it yours!

Here’s a secret tip I love to implement in my casserole baking:
After you sprinkle on the cheese on top, you need 3 more layers:
- Something green
- Something red
- Salt and pepper
For something green I love to use dried parsley from my garden, chives, basil, cilantro, dill, whatever I have on hand.
The something red can be chili powder, paprika, cayenne, etc.
After you broil it to give the top some color, those spices just add such a nice texture and it looks DELICIOUS

(I use this method on enchiladas too!)
One more note before the recipe is this:
I think it is a little easier to grate a cold leftover baked potato, but you can totally just ‘bake’ one in the microwave real fast and mash or grate that. It will work both ways! Honestly I bet even mashed potatoes would taste great!
