Easy Sheet Pan Roasted Sausage and Veggies

This easy sheet pan sausage, sweet potato, and vegetable dinner is so easy to put together and serve any day of the week! Plus, it’s a one pan meal so the cleanup is minimal. This quick and easy sausage and veggie bake just might turn into a new favorite recipe.

Ingredients

The ingredients for this recipe are simple and easy to prep!

For this recipe, you’ll need:

  • 12-14 ounce smoked sausage rope
  • 2 medium sweet potatoes
  • 12 ounces brussel sprouts (I used frozen)
  • 12 ounces broccoli florets (I used frozen)
  • ½ medium red onion
  • 4 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste (optional)
  • Parsley to garnish (optional)

Sausage and Vegetable Sheet Pan Substitutions and Additions

Like most sheet pan meals, this recipe is easy to adjust to your taste. Many substitutions and additions can be made to change up this simple recipe and make it your own. This is a great recipe to use up any fresh or frozen veggies you have laying around. 

Meat

You can use any smoked sausage rope that you’d like. You could also substitute bratwurst or other sausage links.

Vegetables

Any roasting vegetable would work great in this recipe. You can also add vegetables like mushrooms, asparagus, or whatever you have on hand. 

If you’re using a vegetable that requires a longer or shorter cooking time than the rest of the recipe, you may need to precook your substituted veggies or add them in toward the end. 

Oil

You can use your preferred cooking oil to coat the sausage and vegetables for roasting. Make sure that your oil can stand up to at least a 350? temperature. 

Seasoning

You can use whatever seasoning and herbs that you’d like for this recipe. The versatile nature of sheet pan dinners lets you experiment and change up the flavors. You might opt for some garlic, cajun seasoning, or paprika to give the dish an extra kick. 

How to Make This One Pan Sausage and Veggie Sheet Pan Meal

Making this sheet pan sausage and vegetable meal is so easy. I’m sure you’ll want to add this into your regular dinner rotation! Follow the steps below to get this meal on your table quickly and easily.

Step One

Preheat your oven to 350?.

Step Two

Slice your sausage rope into bite sized pieces, about 1.5 inches long. Peel and chop your sweet potatoes into approximately one inch cubes. Peel and chop your onion into approximately 1.5 inch sections. 

If using other fresh vegetables that need prepped and chopped, do so now. To make this recipe quick and easy, I used frozen broccoli and brussel sprouts that only needed to be poured out of the bag and onto the pan. 

Step Three

Spread your prepped and cut sausage and veggies onto your sheet pan. Make sure that your ingredients are in one even layer. If you need to use an additional pan to make sure your ingredients aren’t overcrowded, you can split up your ingredients. 

Tip: Add a silicone liner or parchment paper to your pan before adding your ingredients for easy cleanup later. 

Step Four

Combine the oil and seasonings into a small cup or bowl and drizzle it over your sausage and vegetables. Make sure to coat all of your ingredients for even cooking and crisp edges. Add salt and pepper to taste if desired. 

Step Five

Put your sheet pan in the oven at 350? for about 45 minutes. Your meal will be ready when all vegetables are fork tender and heated thoroughly. 

This may take more or less time if you have substituted ingredients or chopped ingredients smaller or larger than I did. Just keep an eye on your meal as it cooks. 

If you are garnishing your meal with parsley or other desired ingredients, add them before serving.

Serving and Storing Sheet Pan Sausage and Vegetables

To serve this sausage sheet pan meal, simply scoop it out of the pan and onto a plate once it has cooled a bit from the oven. 

You can serve this meal alone or along with a side dish of your choice. Great side options for this meal are rice, salads, or soups. Due to the versatile nature of sheet pan dishes, you can pair this recipe with just about anything!

You can store any leftovers in an airtight container and enjoy them for the next 2-3 days. You can reheat your meal in the microwave or in the oven until heated thoroughly. 

I don’t recommend freezing this meal after cooking as the vegetables will probably get soggy. However, you could prep and chop your ingredients and freeze them before cooking.
