  • 2 pounds (about 9) red potatoes, cubed
  • ¼ cup olive oil
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 1 sweet yellow onion, cubed
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika 
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional: garnish with fresh parsley and more salt and pepper to taste.

Substitutions

  • Any potatoes can be used in place of red potatoes in this recipe. 
  • Any oil with a high smoke point can be used in place of the olive oil. This includes avocado, peanut, and canola oils. 
  • Butter has a smoke point of around 300? so it is not a good candidate to replace the oil in this recipe. 
  • Breakfast meats, such as bacon and sausage, are good additions in this recipe. 

Recipe Notes

  • An oven-safe skillet is used in this recipe. However, if an oven-safe skillet is not available, you can use a regular skillet and then transfer the dish to an oven-safe dish to finish. 
  • This is a one-pan meal if using an oven-safe skillet, cast iron skillet, or braiser.  
  • For crispier breakfast potatoes, leave the potatoes in the skillet for longer in step #2 until they are crispy enough for your liking. 

Instructions

There are only four steps to this easy recipe. Note that the ingredients should be chopped and prepared prior to starting this recipe. 

  1. Preheat the oven to 400?.
  1. Add the olive oil and cubed potatoes to a large, oven-safe skillet. Cook the potatoes over medium-high heat for about 12 minutes. Stir the potatoes 3 times or about every four minutes to ensure even cooking and to prevent the potatoes from sticking. The potatoes should be lightly browned. 
  1. Add the peppers, onions, and seasonings to the hot skillet and stir until combined. Carefully transfer the skillet to the preheated stove. 
  1. Bake for about 25 minutes until the potatoes are soft in the middle and crispy on the outside. The vegetables should be tender.

How to Store Breakfast Potatoes

Any leftovers can be stored in an airtight container in the fridge for 3-4 days. Leftovers can be microwaved or warmed in the oven until warmed thoroughly. 

The cooked vegetables do not hold up well in the freezer. However, if you’d like to freeze the prepped ingredients, you can freeze the cubed potatoes and chopped vegetables. You would just take them out when you’re ready and cook them frozen just like a frozen bag from the grocery store.
