One of my favorite eats during the summer is zucchini and today I wanted to share with you this easy and fun recipe, Pizza Stuffed Zucchini. You might have seen a post that I did about the Whole Wheat Zucchini Muffins which are totally out of this world good but this recipe is really something the entire family can enjoy. I am sure that it will become a favorite.

I love to cook things that are fresh but different and during the summer you can find the best zucchini. When I was younger my grandmother used to fry up zucchini for me when I was visiting and it soon became a favorite. My husband on the other hand never would eat it, said he just didn’t like the taste, so I thought I would try out this little concoction and he fell in love!

How To Make Pizza Stuffed Zucchini

This recipe is so simple and really is a great way to end the summer veggie season. This would be the perfect quick dinner because it really does not take long at all to make.

Ingredients:

  • 4 large zucchinis, cut into quarters
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 jar marinara sauce
  • 2 cups shredded mozzarella cheese
  • 32 slices pepperoni

That is literally all you need to craft these amazing Pizza Stuffed Zucchini. You could also change out the toppings to olives or whatever type of pizza topping you and your family enjoy. First, Preheat the oven to 350 degrees and line a baking sheet with parchment paper or foil.

Use a spoon to scoop the center out of each zucchini quarter. Brush the zucchini with olive oil and season with garlic powder and black pepper. Place the zucchini in the oven and cook for 10 minutes.

While the zucchini is baking, brown the ground beef and onions. Combine the cooked ground beef and marinara sauce.

Remove the zucchini from the oven and fill the center with ground beef and marinara sauce. Top with shredded cheese and pepperoni.

Lastly, Place the zucchini back in the oven and bake for 30 minutes, until the cheese is melted.
